White Bean Chicken Chili

Won church chili cook-off, 1st place out of 20! Only differences (besides making it on larger scale): used white shoepeg corn (canned), kinda pricey but worth it. Rotel: fireroasted, chili ready, & with the green pepper-things (this one adds a *bit* of heat) Frozen bell pepper & sour cream mixed in. And dehydrated onion, out of real ones. Only spice added (besides onion & garlic) were packaged white chicken chili mix, found next to regular chili packet mixes.

Hamburger Cheese Bake

omg delicious. used a reviewer's suggestion of prepared tomato sauce. I always have a bag of frozen pepper/onion mix on hand so used that with hamburger. it doesn't form a solid mass (like lasagna) so maybe everything could be mixed together instead of layering, but I layered it like recipe called for. and here's the clincher for me: my toddler loved it. thank you for this recipe, it's a welcome change from boring noddles & hamburger combo

Zesty Chicken Meatloaf

Maybe because I did not have the ranch and salsa but this seemed bland. Used sour cream and rotel instead. It was pretty good, but I'll season it better next time. Gave me something to do with my ground chicken anyway. And I only had one cup bread crumbs and it seemed to work ok

Hamburger Steak with Onions and Gravy

Used a few member's suggestions, adding milk & subbing vanilla for sherry. Not sure if the vanilla did anything lol but it didnt ruin the taste! Also making mashed taters, thinking this may become a staple in our house...the harshest food critics (my toddlers) love it!

Easy Chicken Fajita Soup

Didn't have fresh peppers so used frozen stir-fry pepper mix, and a drained can of Rotel for the fire-roasted tomatoes. Considered a second can, decided against it but it would have been do-able. Used packet&half of fajita seasoning & closer to 26 oz of chicken broth. Added frozen corn. No hot sauce, the seasoning packet spiced it up enough for me. Also added chicken (season) rub while chicken cooked. Crunched tortilla chips into my bowl, would have added sour cream but was out. Smells delicious & makes tasty left overs.

Potato Soup X

This is the base of my potato soup, except I tend to make a lot more! I use real onion + onion powder. Adding a packet of country (white) gravy adds great flavor while making it thicker, and depending on how much gravy/milk & water ratio there is, sometimes I don't need teh potato flakes. Great recipe, easy and filling.

Banana Banana Bread

This is the only banana bread recipe we use. It tastes wonderful and so fun to make with the kids! They tend to try licking the spoon before we're finished. Only thing we do different is add cinnamon.
