Stir-Fry Chicken and Vegetables

This recipe is wonderful! I used broccoli, onion, zucchini, green pepper and carrots. Whatever you do, don't forget to top it with fresh green onions and also I added toasted sesame seeds. Those additions just set it over the top! I served it over brown rice cooked with broth (or bouillon would work great too! ). I also let the chicken pieces soak for quite a while in the delicious sauce and I pierced the pieces with a fork so they were so tender and flavorful. This is a wonderful recipe!

Green Chili Chicken Burgers

Really good! I made a couple changes because I had some different things in the pantry and also because we like things real spicy! Guacamole: I added a few squeezes fresh lime (or lemon) and a lot of hot salsa, also 1/3 chopped onion and 7 or 8 slices of jalapeno. Burger: 2/3's onion instead of green onion 1/2 tsp chili powder 15 jalapeno slices 1 piece of bread put through food processor I didn't use the green chile's I also used smoked provolone cheese instead instead of cheddar. It was sooooo delicious! Great recipe! Oh ya, also, for the kids I just saved some of the ground chicken and bread crumbs and added some salt and pepper, chicken Worcestershire sauce and Parmesan cheese. I made them in tiny patties and my son said it was the best chicken nugget he ever had!

Grandma's Eggless, Butterless, Milkless Cake

I have tried so many desert recipes for my daughter that is egg allergic that end up anything but resembling a cake, brownie, etc. This recipe is just like real chocolate cake! It is wonderful. I made the recipe into 22 cupcakes and baked them for 24 minutes. I copied others suggestions and did half regular sugar with half brown sugar, 8tbs cocoa powder, 1tbs vanilla extract, 1/2 tsp salt, several handfuls of chocolate chips and 1/2 tsp cinnamon. I cooked it in my stonewear muffin pan and they came out beautifully. I stuck a chocolate chip in the top of each right as I took them out of the oven and sprinkled with powdered sugar right before serving. All the kids loved them. No one would ever know there were no eggs in them. What a great recipe! I am so thankful to have finally found an egg free recipe that not only has the right texture but tastes great. Thanks!

Caribbean-Style Chicken Salad

We loved it! I added a bunch of cilantro, half a cucumber sliced in thin, long strips and (for my husband and I) one whole jalapeno, seeds and all, also sliced in long, thin strips. I really loved the addition of a little heat! I would add thinly sliced red onion if the jalapeno sounds to spicy for you. I served it in onion pita bread and even my son, who never eats salads, loved it!

Parmesan Chicken II

Wonderful! I doubled the seasonings listed and added two tsp. Onion powder, oregano, garlic powder, and instead of salt used Adobo Criollo seasoning. I added a little bit of unsweetened almond milk to the egg mixture and I parboiled the chicken first. (This just means boil the chicken in bouillon flavored water for 20 minutes, then prepare as directed and cook for 20 minutes in the oven.) I used the left over seasoned Parmesan mixture to sprinkle over asparagus coated in olive oil, salt and pepper, and cooked those in a separate pan at the same time. While that was cooking, I diced up carrots, celery, and green onions and threw that into the chicken stalk on the stove from parboiling the drumsticks. I served that as a broth soup with the drumsticks, asparagus, and steamed, seasoned broccoli. Fabulous!

Chicken Tartar Burger

This was awesome! My husband put some heavily oiled aluminum foil on the grill so that they wouldn't fall through the grates. We couldn't believe how wonderful this dish was. so easy and so gourmet. My husband raved and raved.

Almond and Parmesan Crusted Tilapia

Ooh my gosh! Fabulous! I substituted a few things due to what I had on hand;mayonnaise for butter, and almond flour for the slivered almonds, omitted the bread crumbs, added a little poultry seasoning and olive oil. The Old Bay Seasoning is delicious. The whole family oohed and awed, with my seven year old telling me to open my own restaurant! Thanks!

Amazing Chicken

Oh my gosh - SO GOOD! Try this - I used French's French Fried Onions instead of breadcrumbs and added 1/4 c. parmessan cheese, pepper and garlic powder and it was so amazing! Everyone loved it and raved the whole dinner through! Yum, yum, YUM!

Szechwan Shrimp

We loved it! I made a plain batch for the kids with barely any red pepper in it, but for us I sliced up two jalapenos, with their seeds and added it to the garlic and green onions. (We like it hot! ) I also added more red pepper to our sauce. For the veggies, I steamed one head of broccoli, four asparagus and a handful of green beans. I julienned some carrots and cooked those with the garlic too. I doubled everything in the sauce for both batches except for the ketchup. It really was delicious and would even be great with thinly sliced chicken breast instead of shrimp. This definitely tastes like a restaurant and was fabulous! Thanks!

Modenese Pork Chops

Absolutely amazing! I doubled the white wine and used thick bone-in pork chops. I thickened the delicious gravy using Chia seeds that I blended in the blender first. Wow! I baked broccoli, lightly seasoned with a couple tabs of butter and fresh grated parmesan cheese and spooned the gravy over that before serving. I also peeled and cut up apples and cooked on low with water,a little butter and cinnamon. It was such a delicious meal. You must try it.

Bacon Jack Chicken Sandwich

Wonderful recipe! I sauteed mushrooms and onions slowly in butter and olive oil in my cast iron skillet until caramelized and delicious. My husband and I love things spicy so after I grilled the chicken I put it on a pan, added jalapeños, the cheese, and poured Stubbs Spicy Barbeque Sauce over each one. For our children, I placed the chicken on the same pan and added cheddar and placed in the oven to melt the cheese. When I served theirs I put sub-sauce on the buns because they don't like mayo or barbeque sauce. It was delicious. I will add avocado to mine next time. Very quick and easy and extremely delicious!

Balsamic Brown Rice Salad

This so amazing! I had two cups of brown rice and wanted to dress it up for the other awesome recipe I was making - Pork Chops with Raspberry Sauce (you must try these together! ) I sauteed the onions and celery in oil, used about 1/4 cup straight balsamic vinegar and no sugar at all. I also served it warm and together this was one of my all time favorite recipes!

Shrimp Scampi

I took the advice to use half the butter and a quarter cup of olive oil and it turned out great. The kids devoured it and me and my husband added lots of crushed red pepper which really made it taste great. I think I will double the shrimp next time because we all love them so much.

Spicy Chipotle Turkey Burgers

It was really good. I used about 5 tablespoons cilantro and would use even more next time. They didn't have the chipotle chili's at my local grocery stores so I used jalapenos and Adobo Criollo sauce. It probably would have been better using the right stuff but it was still good. I served it w/ mayo but it was way better when we added ketchup and a tomato to it as well. I think it would be awesome with a spicy guacamole, I will definitely do that next time. I also put the mozzarella in between 2 small patties turning them into one large one and it was very good like that. I will use more than 1 teaspoon of cheese inside next time though. Oh yeah, I also added 1 teaspoon of cumin which was a wonderful touch. all in all, it is a very good recipe!

Baked Lemon Chicken with Mushroom Sauce

Awesome! I cooked in the skillet like the author resubmitted in a recent comment. I used lime instead of lemon and doubled or tripled the mushroom sauce. I also seasoned both the chicken and the mushroom sauce with salt, pepper and rosemary. I should have used more lime because when I squeezed some on the cooked chicken breast before adding the mushroom mixture it was amazing! Sometimes I use lemon like the recipe calls for, sprinkle the breasts lavishly with organic seasoning, use garbanzo bean flour instead of regular white flour and plenty of White Zinfandel. This is an amazingly delicious recipe.

Feta Chicken

Awesome recipe. I copied others advise and added fresh basil to the tomato basil feta as well as breaded both sides of the chicken before stuffing it. I think adding more basil and sundried tomatoes would make it even better but it was awesome just like it was. I also copied the side dish someone else posted: angel hair pasta with a sautee of chopped fresh plum tomatoes, onions, garlic, oregano and fresh chopped basil. She was right, it was the perfect side dish. Great dinner and very easy!

Chicken Milano

This recipe is phenomenal! I doubled the sauce, added a bunch of quartered mushrooms when sauteing the garlic and butter and I served it over baked broccoli and it was absolutely fabulous!!!
