Homemade Fresh Pumpkin Pie

This recipe turned out great the first time. It was sweet with that wonderful pumpkin flavor. Spice can be added to taste, but the base recipe is just perfect.

Christmas Fruitcake

I love this cake. I've received a number of compliments on it as well. We have it all year and use whatever dried fruit we fancy. (I omit candied fruit though.) I prefer to use brandy instead of the rum, though I've had success with both. I also tend to add extra spices such as nutmeg and ginger. Always a great cake. I prefer it after at least a week of aging, though some members of the household sometimes sneak into it before. But if you can hide it away, do so as long as possible. It'll be worth it.

Fluffy Canadian Pancakes

They turned out great! I only had two eggs, but it was not a problem at all. I could still taste the egg a bit and I can see how three might be too eggy for some people, but I hand-beat mine so I'm actually kind of glad I could taste the extra work I put into it. It's also nice that the batter went very far. I didn't exactly need it this time but I'm used to other recipes under-yielding (which is probably entirely due to my skill level and not the actual recipe).

Tropical Paradise Pancakes

It's a fun recipe and the batter was nice and light. I used fresh pineapple but my pieces were a bit too large, I'll have to be careful next time.

Caramel Apple Crisp

This was an awesome recipe. I wasn't able to get ahold of any oatmeal but granola substituted just fine. I would recommend eating it as soon as possible. It was still warm and delicious after a couple hours of waiting but the crispness just wasn't there. I did get asked for the recipe which always means its a success. :)
