Champagne Cake I

I made these cupcakes for a friend's birthday yesterday and they turned out great! Not too sweet and just heavy that they did not fall apart, but light and scrumptious. I did end up adding a bit of club soda, about 2.5 tablespoons, before I added the beaten egg whites because it was so incredibly thick my kitchen aid stand mixer was having a time working the batter. Be warned it takes quite a long time to fold in the eggs, and it is important to do so slowly - do NOT make this recipe if you are in a hurry or want a simple, no fuss cake. It is worth the time when you have it, though.

Whipped Cream Cream Cheese Frosting

Really good recipe, came out nice and fluffy. Did work well for piping. This is not an icing you can lay decorations on, though - especially fondant decorations. They slid right off. I added a bit of orange flavoring and iced the Dark Chocolate Cake I from Allrecipes and the combo was delicious!

Dark Chocolate Cake I

Great cake to that works great with so many ways. made this 3 layers with a ganache filling and extra-chocolately frosting and with a whipped cream cheese frosting from this site flavored lightly with orange ... yum, yum! Also made as a bundt with a powdered sugar icing drizzle. Do not be worried by the list of ingredients, a very easy recipe, just adjust baking times when using different size pans, use similar times from packaged cake mixes.

Turtle Bread

Fun recipe and super easy to follow. Kids loved helping with it and shaping the turtles - we made this into 2 loaves so they each had their own turtle, and even dyed them green (added about 10 drops of green food coloring to the milk). Also substituted 1 cup whole wheat flour for 1 cup white. If I make it again, will probably add honey or a bit more butter, needs just a bit more flavor.

Spanish-Style Quinoa

Worked out great! We tried stuffing in green and red peppers, the red taste better - the flavors mix better. I cut each pepper in half, so they were more like boats and added some jack in the last five minutes and upped the temp to 400. Did not change anything with the original recipe, though.
