Cranberry Oatmeal Bars

I made this exactly as directed! The result was exactly as described, a moist tart and sweet cranberry oatmeal bar cookie. It was a great way to use up the dried cranberries I had and I believe I will use this recipe again.

Rocky Road Popcorn Truffles

This was a good recipe, though I recommend the following... Add 4 Tablespoons of cream and butter to the chocolate while melting. Adding the milk and butter creates a ganache which is easier to bite through than solid chocolate. Also before pouring the chocolate, move the ingredients to the sides by borrowing a hole in the middle of the ingredients... then pour the choc into the 'hole' and you will find that the chocolate holds the items together. Lastly, pretzels broken into bite-sized pieces are a good substitute for the popcorn and seem to hold the crunch better. Another reviewer complained about chopping the chocolate... I used chocolate chips and found no need for chopping.

Indian-Style Rice with Cashews, Raisins and Turmeric

Great rice dish! I used jasmine rice (rinsed well), and a handful of dried cranberries too. I also omitted the cashews... Great addition to our meal!

Quick and Easy Vegetable Curry

This was a good BASE recipe. I used 2 tsp of green curry paste, 1/2 can of lite coconut milk, and 1/2 cup chicken broth. The rest of the recipe was the same for me in addition to using 2 medium potatoes (steamed before adding to curry). I left out the tomato paste and did not find it missing anything.

Indian Style Sheekh Kabab

Flavorful, moist, and adjustable! I used ground turkey, fresh ginger (kept in freezer and grated finely), and canned chopped green chilis. I also had to add 1 cup of bread crumbs to give the turkey some binding ability. My family has asked me to make more next time!

Candied Yams

I am only giving 4 stars because I had to make the following adjustments to the recipe: 1.) If using canned yams, chop them into smaller bite sized pieces and drain well. 2.) Add some spice - cinnamon, nutmeg, or ginger. 3.) Either cover the pan for the majority of the recipe, OR cook for a bit before adding the marshmallows. Additionally I mixed the yams, sugar, spice, etc with a tablespoon of cornstarch and also some pineapple tidbits. I used some fresh grated ginger (yum) and cooked on the stove top until heated through. Then I placed it in the crust and topped with the marshmallows and cooked until puffed and golden.

Potato Flake Cookies

These are quite good. They do not flatten in the oven, so you can put quite a few on one pan. I used almond extract instead of coconut, and they are not overly sweet, subtle, and moist. Its a great way to use an abundance of potato flakes. To the reviewer asking about sweet potato flakes, I say go fo it, but do not use as much sugar and use a complimentary extract like orange instead of coconut.

Tomato Bread

Fragrant, beautiful, silky! My changes: fresh oregano and Just Tomatoes dried tomatoes through the food processor, mixed with tomato sauce (instead of juice) added onion powder and garlic salt. Excellent recipe!

Bacon Wrapped Smokies

These were easy and so very good! After placing the bacon arounf the smokie I liberally rolled them in brown sugar before baking. These are a new family favorite!

Banana Pancakes I

Awesome recipe! These are dense and rich pancakes, not fluffy, light, and flavorless! As others suggested I used BROWN sugar and vanilla extract. I also added an extra banana. This was much better than any mix!

Beer Bread I

This is a great base recipe. Add some parm. and fresh chopped basil for an Italian meal, OR add some cheddar and chopped green olives as a snack or appetizer. I do have 2 suggestions: after the bread is baked, brush the top of the loaf with warm water to keep it from getting too crunchy. Lastly, if you put the loaf in the fridge overnight it is MUCH easier to slice.

Pretzel Dessert

This is a great dessert and a definite do-over for my family. Thanks to a previous reviewer, I did substitute the plain jello topping with 1 cup of boiling water, 3oz Cherry Jello mix, and 1 can of cherry pie filling. I also used a spring-form pan and made this similar to a cheesecake. Love this one!

Basic Ham and Bean Soup

I thought this was a great soup! I was stumped as to what to do with this dang ham bone and this really had great flavor and was pretty painless! I used dried lima beans instead and subbed onion powder for chopped onion. I also prepared the beans according to package instructions instead. I think the mustard powder was a great flavor enhancer! Thank you!

Amy's Cilantro Cream Sauce

Absolutely delicious!! I used 1/2 cup salsa verde and 1/3 cup lime and garlic salsa instead of the tomatillo salsa. I have been eating it with tortilla chips! I may have the worst breath in town, but I have a happy tummy! My kids are loving it too!

Miracle Soup

I don't know about the weightloss properties of this soup, but the flavor is EXCELLENT!VERY easy and pretty fast to make, well worth ALL of the freshest ingredients! The flavors all go really well together and make a delicous soup!

Slow-Cooker Pepper Steak

We made this recipe using sliced tenderloin steaks... it was beautiful, smelled great and was terrific over rice! Our 4 year old and 1 year old also loved it! Deffinately a new favorite recipe in our home!
