Beaker's Vegetable Barley Soup

I've made this twice and it's wonderful. I do add more veggies than this calls for. Added green beans and parsnips this time. Very flavorful. Didn't add sugar - not sure why soup needs sugar. Followed recipe otherwise. Very yummy comfort food.

Blueberry Peach Cobbler

Very good flavor. I used sherry instead of apple juice. Yummy. I didn't give five stars because the topping was kind of sparse rather than nice and thick like some cobblers are. However, I used an extra 1/2 C or so of both peaches and blueberries. If I were to make it again, I would double the doughy topping unless I stuck to strict fruit measurements. Oh, and I used 1/2 tsp. of cinammon and nutmeg instead of mace, as other readers suggested. I would probably add more spice next time, too, because I love cinammon taste on peaches. Still, it was very good and not at all difficult to make.

Awesome Chicken Noodle Soup

Incredibly good soup. I followed the recipe very closely. One tip - I went to Natural Grocers for lemongrass, and they only had dried lemongrass (bulk foods). My colander wasn't fine enough to strain out the lemongrass, and the texture IS like eating dried grass. The taste is worth it to make sure to include, but I was spooning out pieces of lemongrass because it was like eating pieces of straw. Make sure to use a fine strainer if you can. The recipe was very time consuming (I did a double batch), but the results were worth it. I put the noodles into the broth and they did use up a lot of the broth, so I added some chicken broth toward the end.

Linguine with Seafood and Sundried Tomatoes

Superb recipe. I followed it pretty closely, other than adding in an extra half pound of scallops. My family said it was outstanding, something they rarely say about a particular recipe. Tasted like a gourmet meal, truly.

Split Pea Soup Atu

Wonderful, tasty soup. I cut the water in half, used vegetable broth and buillon instead of chicken, and otherwise followed the recipe. Even my very picky son liked it very much. That says a LOT! My daughter said she hadn't had split pea soup in years, and didn't realize how good it is. Many thanks for this recipe that I will use again and again.

Sam's Famous Carrot Cake

I have made a few different versions of carrot cake, but this, combined with the cream cheese icing II on this website, is simply to-die-for. I used pecans instead of walnuts and added a pinch of cloves and about about 1/8 tsp. of nutmeg to make is spicier. Otherwise followed the recipe and it is fantastic. This will become my only carrot cake recipe! Thanks so much for sharing this.

Enchiladas Suizas

This is soooo good that it deserves maximum stars. I followed others and fried corn tortillas in cooking spray, dipped in green sauce, rolled chicken & cheese inside. Added red enchilada sauce (1 C) to the verde mixture over the top. Oh, used fresh roasted green chilis, too. Skipped green onions but added cherry tomatoes and green olives, along with avocado. My entire family loved it so much we ate every bite in one evening (four adults). Absolutely delicious - thanks for recipe. This is a keeper!

Spinach Pomegranate Salad

Fabulous salad and easy to make, except for seeding the pomegranate. My daughter said it took her about 15 minutes to seed it. This is a keeper, and is the perfect Christmas salad. Thanks for the recipe!

Vegetarian Meatloaf with Vegetables

My family loved this, even my non-vegetarian husband, who is suspicious of these kinds of recipes. I followed the recipe pretty closely first time. Am making it today again and might modify slightly just to experiment. It honestly does taste like "meat" loaf!!

World's Best Peanut Butter Fudge

Made thes two years now and it's been the creamiest pb fudge I've ever made. Like others, I added a tsp. off vanilla and I premixed the fluff, peanut butter and flour. Didn't need a candy thermometer! Love this recipe, thanks!

Delicious Ham and Potato Soup

Excellent soup, but I didn't follow the recipe exactly. More or less doubled recipe and used too much water so added about a 1/8 C potato flakes to the roux to thicken it because I like thick potato soup. Grated fresh pepper in it, didn't add salt at all. Used leeks instead of onion due to taste preference. Oh, instead of bouillon cubes used two packets of Knorr chicken soup base (think they're about 2 TBS each). I used red potatoes and didn't peel them. I mashed them with a potato masher right in the pan after they were cooked. Still stuck close enough to feel like I can adequately rate this wonderful recipe.

World's Best Potato Soup

Excellent, old-fashioned gingerbread. Only made small changes - used part brown sugar, part white. Increased spices slightly. Doubled recipe and was a little too much batter for 9x11 pan - made really thick slices. Served with fresh whipping cream for Christmas. Yummy!

Red Beans and Rice

Made it for the second time just now. It was wonderful - spices were just perfect in taste, although I did cut the salt by half for health reasons and substituted truvia for sugar. Overdid the andouille sausage first time, plan to only add about half the quantity. Followed the recipe pretty much both times though. However, as Clara Peller once said, "Where's the (beef) RICE?!"

Chocolate-Banana Tofu Pudding

I liked this very much, but it really needed to be bit sweeter, so I added about an eighth tsp. of Stevia and liked the taste better. I'm happy to find a low fat, healthy dessert! Thanks for sharing this, Mirby.

Mother's Ham Casserole

I thought this was Ok, but pretty bland. I would have to spice it up a lot to try another time. Added more potatoes than the recipes suggests, though, to yield enough for a family. Two of my family members DID like it a lot, I might add.

Vegetarian Chili

I made this for my son (newly vegetarian, age 19) and husband (non-veg) and they loved it. I used only one onion because my son is not an onion lover. I followed the recipe pretty closely. Like everyone said, it makes a ton of food, so be prepared for left-overs for awhile. In re-reading this info, on a freezing cold October day in Colorado, by golly, I'm heading to the kitchen to make it AGAIN. Thanks for sharing the recipe, julieliz!

Orange Beef-Style Tofu Stir-Fry

Lovded this!Am making it for the third time today. I'm using broccoli, garlic, mushrooms, zucchini, and onion for the veggies today. Do double the sauce when you make it. Be careful with the chili paste; it IS very spicy. I used less last time and the family liked it much better.

Yummm. I've tried several banana bread recipes, and I think this might be the best ever. I used 1/2 C white sugar and 1/2 C brown sugar and it was plenty sweet.
