Chickpea Falafel Burgers

These were very tasty but they need a few minor changes. First, I would drain the chickpeas and reserve the liquid, then add a little at a time until you get the right consistency. I used the whole can and it was very loose. I added more bread crumbs to "firm" it up, but that made it taste too "bready." I didn't have any mushrooms when I made these so I substituted grated carrots. It was delicious and gave them a little more color. I will definitely make these again! Thanks, Jojo!

Breaded Dijon Pork Chops

My daughter loved this! The dijon mustard added a unique flavor. I used plain bread crumbs and they had trouble sticking to the meat while frying. I browned the chops on the stovetop, then popped them in the oven to finish baking (cuts down on the amount of oil used). Delish!

Sweet Potato Casserole II

I made this for Thanksgiving last week and it was a hit! I followed the direction except I splurged and used real butter. It was sweet, but not too sweet. Thanks for sharing!

Fajita Marinade I

Don't change a thing in this recipe -- it's delicious! Even if you can only marinate your meat and vegetables for an hour it still flavors them beautifully!
