Easy Morning Glory Muffins
These were really good! The first time I made them I followed the recipe exactly. They were really good, but I knew I needed to make them healthier. I changed the flour to whole wheat flour, cut sugar down to 1/2 cut (I know!), and used 3/4 cup unsweetened apple sauce and 1/4 cup oil instead of 1 cup oil. I couldn't find unsweetened coconut, so I had to use sweetened. These changes made the nutritional info per muffing (12 servings): calories: 247, Fat: 10.6g, cholesterol: 46.3mg, sodium: 250mg, potassium: 260mg, carbohydrates: 34.5g, fiber: 4.1g, sugars: 16.1g, and protein: 5.5g. Still a muffin, but a bit healthier!

The Best Red Enchilada Sauce
This sauce is great! I didn't have ancho chiles in my grocery store, so I used dried New Mexico chilies. I think any large red chile would work! It turned out great! Not as much work as other enchilada sauce recipes I've tried but just as good or better! Love it with the cottage cheese enchiladas from this site.

Thirty Minute Meal
This was a great recipe to start from. I added garlic like other reviewers said. I really liked the idea of a sort of deconstructed cabbage roll, so I used a few spices I use in mine. I used the lightest sprinkle of allspice, some paprika, and lots of black pepper. I didn't have condensed tomato soup, so I used a can of diced tomatoes & just a splash of beef broth for a bit more liquid. The cabbage gives off a lot of it's own liquid once it starts breaking down, so I didn't need much broth. My husband said he liked it even more than cabbage rolls (& it's much easier) so I think this will be a regular for us!
