Avocado Egg Salad
This is DELISH! Best version of egg salad I've ever had (and I've had a lot of egg salad). I'm not a huge mayo fan, so I substituted plain greek yogurt instead. Used grey poupon mustard and chopped dill pickles instead of sweet. Both my husband and I thought this was amazingly, addictively good -- I didn't tell him about the yogurt and he had no idea! It gave a nice tang and the whole thing was so creamy. Have made it twice in one week and will definitely make again!

Blueberry Flax Pancakes
This was my first go at a "healthy" pancake, but I'm pregnant and had to answer a craving! I found this recipe a good compromise as they do contain flax for fiber and blueberries! I used fresh blueberries and 2% milk as that's what we always have and these came out thick, but fluffy and VERY filling! Quite yummy with a little bit of pure maple syrup drizzled on top. In fact, they are so filling I could only eat one! Storing the remainders to be re-heated within the next couple of days as snacks! Yum!
