Linda's Cranberry Cookies

Delicious and very easy to make! I brought the cookies to the office and everyone loved them. I found the cookies don't actually grow/spread enough to take up the suggested two inches between each cookie. They actually inflate more than spread (due to the pudding mix) so depending on the shape you want your cookie to be it might be a good idea to flatten them a bit before putting them into the oven. I'm definitely going to try other combinations of pudding, chocolate chips and dried fruit. Macadamia nuts are also a great addition!

Egg-White Crepes

Absolutely delicious! I made these for a Saturday breakfast and was a fantastic hit. Instead of filling the crepe with mixed berries, I filled it with melted chocolate, sliced almonds and sliced bananas. I also took other reviewers advice and used applesauce instead of vegetable oil. I found the ratio of flour and milk to result in thicker than expected batter so I added about two tablespoons more milk. Not only did the crepes come out thinner but made it easer to spread the batter in the pan. Also, I found that a dash of cinnamon and half a tablespoon of vanilla extract really adds a nice flavor to the crepe. The last alteration I made was cooking the batter in coconut oil instead of using the recommended cooking spray. It’s healthier and tastier! I decorated the crepes with powdered sugar and served them with vanilla yogurt, sliced strawberries and blackberries.

Real Hummus

Overall really great hummus recipe. I've made some changes that I think readers would appreciate. Rather than using raw garlic I roast about half a garlic clove in olive oil for 20 minutes before adding it. (toaster oven or normal oven 350) In addition, I add 2tsp cumin (sometimes more, up to the chef) cumin and 1tsp ground chili peppers. Making hummus from scratch is just amazing! You'l never buy pre-made from the store again!
