Vegan Brownies

I made a couple small tweaks, and these turned out fantastic! I used just half the oil the original recipe called for, I added 1/4 tsp of almond extract, and a healthy squirt of chocolate syrup. That's probably not vegan, and I apologize to those who are offended by that change. I was making this recipe simply because I was out of milk and eggs and making do with what was in my cupboards. The batter/dough was incredibly thick and hard to work with (probably because of the lack of oil), but once I got it spread into the pan it turned out just fine. I would definitely make it again just as I did this time, it tasted great and had a pleasant texture.

One Bowl Chocolate Cake III

It is a rich and dense cake, and like other reviewers, I found it a bit tricky to stack as a layer cake because it was just so moist and heavy, but I was able to keep it together in the end. I used 1 tsp of vanilla extract and 1 tsp of almond extract, and I used half almond milk and half dairy milk. It gave it a darker, more exotic flavor. By far the best tasting chocolate cake I've made.

Easy Meatloaf

Love it! I've made this several times. I can see why people might want to sautee the onions, but we like ours firm so I don't. I always add a good health squirt of ketchup (probably like 1/3 cup or so) directly into the meat mixture. It gets the sweetness throughout the whole meatloaf that way.

Delicious Black Bean Burritos

We make these all the time now. We find this recipe most useful when we're having our vegetarian friends over! What a great hearty meal without a drop of meat. We also add cheese to the completed burrito because we're die hard cheese fiends.

Salsa Chicken Rice Casserole

Really yummy! I made it exactly according to the instructions, and it turned out great. While it was a little heavy on the rice, we're a rice-loving family so it suited us just fine. Not the ideal meal if you're on a weight loss diet, though... which I am so that kind of sucked. But the taste and ease of preparation are superb!

Barbecue Chicken Casserole

I thought this was amazing! It has such a unique blend of flavors. It tastes a little like Chinese food... but with corn... that's what my husband said anyway. I substituted boneless skinless chicken breast tenderloins (cut in half so they're nice sized chunks) and drained canned corn. FYI, if you're counting Weight Watchers points like I am... this turns out to be a low point recipe! I'm adding this to the family book of recipes and making it again.
