Extreme Banana Nut Bread 'EBNB'

My bread came out slightly overdone after cooking it just 55 minutes, though this might be my recently fixed oven's fault. However, my roommate gave it an A! If I make this recipe again I will cook for only 45 minutes.

Garlic Delicata

This recipe turned out just okay for me. I think someone else mentioned that it just tasted like all the ingredients mixed together, and I agree. Nonetheless, it's not really anything to complain about, just nothing to rave about either.

Easy Bok Choy

This was tasty! I made this recipe using some normal-sized bok choy leftover from making stir fry. I enjoyed adding a tablespoon of soy sauce, though next time I would probably use less.

Pumpkin Curry with Lentils and Apples

This was good...it just made a ton of food. As a single person, that's not usually my goal, but I could see it being a good recipe for a get-together. It was hard to evenly cook all the ingredients in the pot. If I make it again, I may skip some.

Winter Red Sauce over Spaghetti Squash

This recipe was excellent! Just what I was looking for! My changes: I microwaved the squash for eight minutes to save time (it comes out fine), and used an entire package of Tofurkey sausage that I sliced and added to the sauce. Yum!

This recipe was alright. I guess I didn't find it as fantastic as other reviewers. I felt that it needed something extra, so I added oregano. I used one large fresh tomato, came out fine.

Tuna Delicious

This recipe was a real let-down. I had really hoped for better since it's so highly rated, but like some other reviewers, I found it very boring. I even added one chopped garlic clove, some chopped fresh mushrooms, frozen peas, and bread crumbs, but it still disappointed. Had to add pepper, salt, and red pepper flakes to make it more palatable. I could see it being a good recipe if you have children in your family who are picky eaters, I suppose, but I wouldn't recommend it otherwise.

Quinoa with Chickpeas and Tomatoes

I was surprised by how tasty this was. I thought, just looking at the ingredients, that there wouldn't be enough flavor, but it was great! Like others, I subbed cilantro for parsley, and used red quinoa (what I had on hand). A great vegetarian/vegan meal!

Creamy Smoked Salmon Pasta

Hate to say it, but this could have been better. Like another reviewer, I felt like the delicious smoked salmon taste was drowned by the sauce. Next time, I will use actual garlic cloves, and perhaps asparagus would be better than peas.

These turned out really well! I was surprised to use mayonnaise, but you really couldn't taste it! I used whole wheat flour and added walnuts and cinnamon --delish!
