Juicy Thanksgiving Turkey

Reviewed: Nov. 28, 2013
Made this turkey EXACTLY per the recipe (except had to increase the covered cooking time but did the uncovered per directions). My guests couldn't stop raving about the amazing turkey and gravy! It was so juicy, not dried out at all. They said they never had such moist turkey before. It was the first turkey I ever made!

Easy Mexican Casserole

Reviewed: Feb. 4, 2009
Thanks to some reviews I was able to make this delicious recipe while tweaking the ingredients for a somewhat healthier alternative. All thumbs up and second helpings all around the dinner table! For 8 servings I used 1 1/2 lbs ground chuck, 1 pkg of Lawry's taco seasoning mix, 16 oz jar of Newman's Own all natural chunky mild salsa, Trader Joe's 15oz can of cuban style black beans (drained), 15oz can of Kuner's southwestern corn n peppers (drained), 6oz sliced black olives (drained), 4 sliced green onions, 15 oz can of petite diced tomatoes (drained), 8oz nonfat plain yogurt mixed with 8oz reduced fat sour cream, 2 cups cheddar/monterey jack cheese. I used blue corn tortilla chips, did not crush them, and only enough to cover the bottom of the dish...4 cups would have been way to much even in the 11x15 pan I used. I browned and drained the meat and then added the taco mix, the salsa, drained beans, and drained corn and mixed well in the skillet. Then layered everything according to the original recipe but added a few handfuls of crushed up blue chips on top. note: I do have a couple of kids who asked for a little extra sour cream on the side. Also, if you like more kick use hot salsa or add some tabasco etc.. GREAT alternative to tacos!

Three Cheese Garlic Scalloped Potatoes

Reviewed: Dec. 9, 2009
I made this dish last night for a family party. Everyone loved it! So much so that they asked me to make it for Christmas. The only change was to use 1/2n1/2 based other reviews. Also, since I doubled the batch I had to cook it about 1/2 hour longer (the last 1/2 hour I turned the temp up to 400 to get the top slightly browned and bubbly..turned out perfect, not too liquidy.

Monkey Bread I

Reviewed: Jan. 3, 2010
an absolutely delicious, fattening splurge for a holiday treat! I didn't put the nuts/raisins as no one cares for them. Still they were DELICIOUS! definitley use a bundt pan. 2 of the kids want this as their bday "cake"

Green Beans Amandine

Reviewed: Jan. 3, 2010
used the kosher salt instead of the seasoning salt (personal taste) and used some fresh minced garlic too. Made this for my son's bday at the beginning of Dec and have been asked to make it twice since then. Thanks for a great recipe! Let me add one more thing after making this several times....only use fresh green beans...turns out way better!

Stuffed Peppers with Turkey and Vegetables

Reviewed: Nov. 9, 2011
All I have to say is OMG!! Healthy and delicious! I just put the peppers in the oven and I can't stop eating the leftover filling! I only used green peppers this time cuz the red were $1.50 each today! I added some fresh garlic to the veggies, and probably added some more then the recommended seasonings just for some more flavor. Great recipe. Great base to start with to use whatever ingredients you want.

Mom's Zucchini Bread

Reviewed: Oct. 2, 2012
I made this bread once (only omitting the walnuts) and it was delicious...but sweet and more like a dessert....still 5 stars for delicious. Just took my second batch out of the oven and this time it is 5+ stars, not as sweet, but moist and delicious! I used the same proportions as the recipe (still omitted walnuts, personal preference), but substituted wheat flour for 1/2 the amount called for, 2 tsp ground cinnamon instead of 3 tsp, replaced 1/2 of vegetable oil with 1/2 cup of unsweetened, natural applesauce, and replaced 1/2 the amount of white sugar called for with brown sugar.

Apple Crisp II

Reviewed: Nov. 28, 2013
Made this last night for an early Thanksgiving celebration...it was amazing! My guests ate this over the 2 home made pumpkin pies! I put it in the often as everyone sat down to eat, and it was hot and crispy when it was dessert time. Thanks for the recipe!

Slow Cooker Cilantro Lime Chicken

Reviewed: Dec. 3, 2013
Per other reviewers I used good quality salsa, probably used 1/2 cup chopped fresh cilantro and the juice of 2 limes. I have made this recipe twice, and not a bite goes to waste! Once I used packaged seasoning, and the next I put in my own seasoning. Didn't turn out too salty either way, and was delicious.
