My favorite things to cook

Basically anything simple, easy and fast that also tastes good and is relatively healthy. Tall order I know, but I like making things up as I go along when it comes to cooking. That of course, has it's ups and downs considering I can usually come up with some pretty creative ideas...I just usually never remember what they are.

We always baked cookies for all the neighbors at Christmas time and then delivered them door to door. It was so fun!

Oatmeal Chocolate Chip Muffins

Made these yesterday. I found them to be very moist and really yummy. I didn't have any problems with them tasting "off" or too starchy. Maybe some people just don't make muffins well. The 15 min wait time didn't bother me either. It may be a bit inconvenient if the muffins are all your are making, but if you're making them to go with something then the 15 min gives you time to keep preparing other things. I did omit the nuts and used a granola crumble on top instead. They tasted great!

Oatmeal Chocolate Chip Cookies III

These cookies are perfect! And no eggs in them, so you can indulge yourself a little and eat some dough while no one is watching ;-) I've made them twice now and each time was wonderful! Give them a try...they are SUPER easy!

J.P.'s Big Daddy Biscuits

I've made these twice now...they are EXCELLENT, although the recipe doesn't really make that many biscuits so you end up a little short.
