these are the best pancakes ever! a great recipe! they turned out super light and fluffy. if you want really fluffy pancakes, when you are mixing the wet ingredents, separate the egg yolk and the egg white. add the egg yolk with all the wet ingredients. after mixing the wet and dry ingredients, beat the egg white until there are stiff peaks and then gently fold the beaten egg white into to pancake batter. it works with any pancake recipe. thats what i did with this recipe and it made them the fluffiest pancakes i have even eaten. i highly recomend this recipe. its awesome!! its my family's new favorite thing for breakfast! **EDIT** my mom and i have recently discovered that we have IBS and so we are not supposed to eat butter, milk, or egg yolks. so i just made this recipe again today but i used soymilk instead of milk, and egg whites, and no butter. they still turned out wonderful! great recipe!! :)
