Butterscotch Oatmeal

this was good. I halved the brown sugar and the butter. Next time I may add some pecans. I wisked the eggs, then added the brown sugar and wisked some more before adding the milk. The eggs were fully incorporated and I didn't have any problems.

Potato Latkes I

I doubled the recipe, but I only put a little extra salt ( I did use season salt though) and they were still a little salty for my tastes but other then that they were good. I also add a little pepper after the first batch and they were better.

Sweet Corn Muffins

These were great! Not too sweet for me and my family. I might use my stand mixer next time to mix it though. I did add about 1/2 cup or more of frozen (thawed) corn folded in right at the end because I love con in my corn bread.

Honey Peanut Dressing

I used this dressing for a cold asian noodle salad with chopped peanuts, shredded carrots, and green onions. It got rave reviews. I did sub white wine vinegar for rice because that's what I had and powdered ginger instead of fresh and it was fine.

Lasagna Roll-Ups

These were great! I did use some meat sauce I already had in the freezer. I also used ricotta instead of the cottage cheese. I added garlic powder and mozzarella cheese to the ricotta too. My husband asked if i could make thses every night.

Banana Praline Muffins

These were the best muffins I have ever had! I did double the topping and added vanilla to the batter. I made mini muffins and they bakes in only 10 minutes.

Honey Walnut Shrimp

I didn't really care for the shrimp batter or the nuts. But the sauce was a keeper. The batter had no flavor and had an odd styrofoam texture. I did ues the corn starch that others suggusted. Next time I will use the sauce but maybe make a tempura batter. The nuts never "dried" I would try another candied nut recipe also.

Peppery Cheese Bread

RECIPE GROUP-This was awesome!!! I used bread flour (I always use that for bread) I took another reviewers sugguestion and I used 1 cup cubed cheddar. I loved the pockets of cheese. I also threw in 1/4 cup shredded mexican blend cheese because it needed to be used up. My family and I love garlic so I added 1/2 tsp. of garlic powder, it was just the right amount. Next time I might try the quick rise yeast. It did take 2 hours to rise but my sour cream and egg were cold. Mine was a little overbaked at 30 minutes so check it a little earlier. It made 2 8x4 loves for me.

Bolognese Sauce

My husbad really liked this. I did use crushed tomatoes instead of plum because that's what i keep on hand. I also replaced the stock with milk and let that soak into just the meat because all the other recipes had milk and I like it that way.

Chocolate Chip Oatmeal Cake

Wow, this is great! We all loved it. It's a nice snack cake. I did use dark brown sugar, a pinch of cinnamon , pecans instead of walnuts (it's what I had on hand) and 1 tsp. vanilla (just habbit). It also cooked in exactly 20 minutes on a rimmed cookie sheet. Next time I might sub in some whole wheat flour insted of the AP and see what happens.

Pizza Swirls

My husband was a huge fan and asked if I would make these for dinner more often. I used turkey pepperoni, u can't tell the difference and it is less greasy. I also filled ours with what we liked and what we had on hand. very versitle recipe. I did have to cook mine for 20 minutes though. The second time I made thses I used aluminum foil that I forgot to greese and they stuck very badly.

Oat Waffles

I halved this recipe for 2 people. Though it made me 6 waffles. I used half WW flour and half AP flour. I also blended the oats to make the oat flour. They came out great and tasted healthy.

Bada Bing Bada Banged Potatoes

I scaled down this recipe for 4 but I should have doubled it! They were so good we were all fighting over the last of them. I didn't have any oregano so for the herbs I just used basil and italian seasoning because that what I had. I also didn't use the red pepper or the parsley but they were wonderful anyway!
