Mediterranean Puff Pastry Chicken

Made this a couple of times with my boyfriend, and it was okay. The end result wasn't worth the mess I made preparing it - if I were to make it again, I'd probably add more feta.

I have issues with making this sauce work - it's delicious when I can manage it, but the butter separates easily - I think that's just my fault, I'm new at this.

Fish Tacos

I've only made the sauce for these tacos, because I'm not a big on beer batter. I make it exactly as shown - except I make sure to find a big jalapeno, my boyfriend and I love spice! This sauce is delicious, and fits right into any fish taco, whether battered or not. I don't usually have capers on hand, so I'll mince up some dill pickle instead.

Spinach-Stuffed Salmon Fillets

My first recipe from this website, fun (and a little messy!) to make, and it was delicious. I added more pesto, and used marinated sun-dried tomatoes, because they didn't get quite soft enough during cooking.

Rosemary Ranch Chicken Kabobs

Made this exactly as listed - I only used three breasts, but made the same amount of marinade and saved a little before putting the chicken in, so I could use it on rice. This recipe is fantastic and easy, I am definitely saving it! Remember to soak your skewers if you use wood ones, so they don't totally burn away.

Easy Spicy Roasted Potatoes

Haha, I came back to rate this and realized I never put the onion in when I made them! The potatoes tasted delicious, I loved the chili powder. Definitely keeping this recipe around - onion or no!

Slow Cooker Beef Stew I

This is an easy, fun recipe! It leaves a lot of room to add and mess with things, which is great for me, since I'm still learning how to cook. I added red wine, and upped the Worcestershire sauce, because I like tangy flavors. Delicious!

I am in love with this recipe! I'm still learning how to cook, and this soup was easy and delicious and filling! I added two stalks of celery, a can of stewed seasoned tomatoes, and 1/2 tsp. each of cumin and cayenne to the broth. I also added some chopped cilantro and 1/2 tsp. of cumin to the meatballs. I had to be careful getting all the meatballs in, if you stir too much they'll break easily, but you don't have to move it much to get them cooked through once it's covered. I can't wait to make it again!

Seared Tuna with Wasabi-Butter Sauce

I am having a really hard time getting this sauce right (I'm new at this, and the butter keeps separating, I think), but even with being a little off, this recipe is very good! I'm going to keep practicing.
