Quinoa Veggie Salad with Zesty Vinaigrette

I loved this! What a fantastic way to use quinoa. I cut the quinoa and dressing in half, but not the veggies. Excellent! I will definitely make this again. Thank you!!

Glazed Lemon Muffins

I halved this recipe to make 8 texas-sized muffins, and halved again the topping per other reviewers advice. I also added poppyseeds and a dollop of lemon curd in the middle of the muffins, which made them moister inside. They were very yummy. My husband even said, "you're amazing" as he saw me sprinkling struedel on top. He was impressed before he even tasted them! I had a reheated one this morning, two days after baking, and it was still very yummy. I'll definitely make these again.

Brownie Bottom Pudding Pie

So, I didn't plan on putting cool whip on top of my brownie pie, but there is no way I would've been able to. The cooked brownies filled 3/4 of the pie plate! I barely had room for the pudding. I improvised with cheesecake pudding and the combination pleased my hubby. I don't think I'd make this again. If so, I'd decrease the brownie ingredients.

Vegan Lemon Poppy Scones

We aren't vegan, but I ran out of eggs wanted to make a yummy breakfast that would incorporate some lemon curd I'd made earlier in the week. These were perfect! I made some major adjustments however. I substituted 1/2 c. butter and 1/4 cup applesauce for the margarine, omitted the water, and used real milk. I also only used 1 Tbsp. of poppyseeds, which was plenty. My only complaint is that these spread out like cookies when baking and looked more like poppyseed pancakes. But they tasted great drizzled with lemon curd! I'll make them again and refrigerate the dough so they won't spread.

Chuckwagon Stew

This was a really hearty stew that pleased my veggie-hating hubby. I tweaked it slightly by omitting one of the potatoes and adding 1/4 c. barley and 1 c. of beef broth. Delicious! I'll definitely make this one again.

Cinnamon Belgian Waffles

These waffles are incredible! I've made them twice, both times for company and everybody raves. They're light and fluffy with the subtle hint of cinnamon. Mmmm. I'm committed to this recipe when I want homemade waffles. My only complaint is the servings... 3???

Vanilla Ice Cream V

This recipe made two batches for my kitchenaid icecream maker attachment. We made half and refrigerated the other half to make later in the week. The texture is not quite as creamy as full-fat icecream, but we really liked it and will make it again and again. It is easy to make with few ingredients and less guilt!

Quick Coffee Cake

This coffee cake took twice as long in my oven and was a really dense odd texture. My family wasn't impressed and I wouldn't make it again.

Balsamic Green Bean Salad

This recipe turned out very good. I took the advice of other reviewers and boiled the beans a little longer to make them a little more tender and added feta cheese. My picky husband thought it was "ok", but my parents who were joining us for dinner really liked it and my mom took the recipe home.
