Eggplant Parmesan II

This was my first time making eggplant parmesan and I will defintely make it again. I halfed the recipe but only used 1 eggplant, and that was plenty. I did use a lot more eggs than called for...I needed 3 when it only called for 1. I didn't brine my eggplant like others recommended and still thought it tasted fine. I may try it next time to compare the difference though. Overall it was a really good dish!

Country Apple Dumplings

I have to admit I was a skeptic, but this recipe is amazing! It was such an easy dessert to make, but tasted like it took hours....not to mention it made the house smell delcious. I halved the reciple and followed the advice of other reviewers by adding a tsp of vanilla to the sugar mixture and used 1/2 cup white sugar and 1/4 cup brown sugar. I didn't have mountain dew on hand so substituted ginger ale. I also left my apple unpeeled, but the apple was so soft inside you couldn't even tell. My hubby hasn't stopped talking about these dumplings! Thanks for sharing the recipe!

World's Best Lasagna

This was awesome! I stuck to the recipe for the must part, even letting the sauce simmer 1.5 hrs. I eliminated the salt and used no-salt-added products as I was making for someone who is watching sodium. Even with eliminating the salt it tasted fantastic! I also used shredded cheese instead of sliced. My husbad said it was my best lasagna yet! Thanks for sharing!

Blackened Tilapia with Secret Hobo Spices

I followed this recipe exactly minus the white pepper (didn't have any on hand) and served on rice instead of bread. The fish was too spicey for my taste, but my husband loved it! I will definitely make this again, but will probably cut back on the cayenne to better suite my taste. I was a little skeptical of the white bread, but after trying the fish I think it would be great on a sandwich! Great, easy and fast recipe! Thanks for sharing!

Quiche Supreme

This is my husband's favorite thing that I've ever made....so it's become a staple in our household. I've never had any complaints when serving to guests either! I use sausage instead of ham and fresh mushrooms. I like the Marie Callender's frozen pie shells. They hold together nicely.

Cranberry Apple Bread

I really liked this bread, but my hubby wasn't a big fan. Luckily the rest of my family enjoyed it. It's really sweet and the cranberries add great color! I grate my apples to make the bread more moist.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

This recipe is wonderful! I used chocolate cake mix and already made cookie dough from the grocery. Mine always get a hole in the center, but a dot of frosting on top covers that up. I took this to a youth group event at church and the teens ate them up!

Lemon Butter Chicken

This was a pretty good dish and very quick to make. I used two large chicken breasts and there was plenty of sauce to pour over the rice I served it with. I didn't have a fresh lemon so I substituted 2 Tablespoons of lemon juice. I also used fresh garlic instead of powder and used black pepper since I didn't have lemon pepper. This recipe is a keeper for nights when I don't have a lot of time!

Zucchini Apple Bread

I was looking for a recipe to use up the apples we collected apple picking and this one is a winner! The bread turned out great! I kept one loaf and served the other at church and it got rave reviews. I followed the advice of other reviewers and grated the zucchini and apple and added an extra 1/2 teaspon of cinnamon. Yummy!

Creamy Butternut Squash With Cinnamon Soup

I was very disappointed with this soup. I followed the recipe exactly, except that I baked the squach beforehand like many reviewers suggested. Both my husband and I did not like it. I will say the soup has a very nice texture and consistency, however I felt it was lacking flavor. It tasted like it needed something, but I couldn't figure out what.

Red River Beef Stroganoff

Slow-Cooker Chicken Tortilla Soup

I followed the advice of others and added frozen chicken breasts to the soup instead of cooking the chicken beforehand. Other than that I followed the recipe exactly. The soup was fantastic and my husband has been begging me to make it again! This will definitely be a regular menu item in our house!
