Eggplant Parmesan II
This was my first time making eggplant parmesan and I will defintely make it again. I halfed the recipe but only used 1 eggplant, and that was plenty. I did use a lot more eggs than called for...I needed 3 when it only called for 1. I didn't brine my eggplant like others recommended and still thought it tasted fine. I may try it next time to compare the difference though. Overall it was a really good dish!

Country Apple Dumplings
I have to admit I was a skeptic, but this recipe is amazing! It was such an easy dessert to make, but tasted like it took hours....not to mention it made the house smell delcious. I halved the reciple and followed the advice of other reviewers by adding a tsp of vanilla to the sugar mixture and used 1/2 cup white sugar and 1/4 cup brown sugar. I didn't have mountain dew on hand so substituted ginger ale. I also left my apple unpeeled, but the apple was so soft inside you couldn't even tell. My hubby hasn't stopped talking about these dumplings! Thanks for sharing the recipe!

World's Best Lasagna
This was awesome! I stuck to the recipe for the must part, even letting the sauce simmer 1.5 hrs. I eliminated the salt and used no-salt-added products as I was making for someone who is watching sodium. Even with eliminating the salt it tasted fantastic! I also used shredded cheese instead of sliced. My husbad said it was my best lasagna yet! Thanks for sharing!
