Chewy Crispy Coconut Cookies

Yum! Only change I made was to reduce the salt to 1/4 tps (per other reviewers). Also, I didn't bother to crush the corn flakes. These are really delicious and so easy to make.

Apple Flavored Pot Roast

My husband gave this a 9.5 out of 10! So easy and so good. I added more garlic and chopped onions and used a cup or two of apple juice instead of the concentrate (helped reduce the sweetness). Made mashed potatoes and gravy with the juice. Delicious and so easy. Thanks

Mocha Chocolate Chip Banana Muffins

Kids loved these. Disappeared fast (muffins, not kids). I substituted applesauce for 1/2 the butter, added 1/4 cup flax meal and used just 1/2 cup of chocolate chips, to make them a bit healthier. Also, I used a heaping tablespoon of espresso powder dissolved in small amount of water. The coffee flavor made them special and unique. Thanks so much for a great breakfast treat.

Lemon Cream Pasta with Chicken

Easy and so good. Picky teenagers loved it! I substituted whole milk for the cream and it still came out yummy. (I thickened the sauce with 1 or 2 tblsp of corn starch mixed with water). Baking the chicken added to the flavor, so don't skip this step. Thanks for this unique and delicious recipe!

Granny Cake I

Can I give this cake 10 stars? It is so incredibly good and so easy to make. And, I usually don't like pineapple! I used sweetened condensed milk and omitted the sugar for the topping (as recommended by others) and it turned out scrumptious. I can't say enough about how yummy this cake is. Serve it warm - it's even better.

Delicious Rosemary Bread

Easy Pork Roast

This is the best pork roast ever. Delicious, tender, succulent. I used a white onion and a 14 oz can of tomatoes, but otherwise stuck to the recipe. Please try this if you like roast pork. Lady Alethea is a genius!

Rosemary Turkey Meatloaf

Delicious! My picky 12-year-old called it "the best meatloaf you've ever made, mom." I added garlic and a teaspoon of beef bouillon for extra flavor. Also, next time I will reduce the liquids slightly because it was too soft and mushy to slice. Thanks for a great recipe.

Hash Brown and Pork Chop Casserole

Easy and delicious! My husband and son loved it. Perfect for company or Sunday dinner on a cold winter day. I added garlic powder and pushed the chops down into the potato mixture to keep them moist while baking.

Baked Tilapia

This is delicious and so easy. I used fresh herbs from my garden and eliminated the butter, to cut the fat. I drizzled olive oil on the fish prior to broiling. Keep cooking time to a minimum, as overcooked tilapia turns leathery.

Homemade Vanilla Pudding

Excellent and easy. I, too, used soy milk and it came out great. I disolved the corn starch in a couple of tablespoons of milk before adding it and that eliminated any problems with lumps. This would make a great custard topping for fruit, or any dessert.

Allison's Supreme Chocolate Chip Cookies

Everyone who's tasted these cookies say they are THE BEST chocolate chip cookies they've ever had. I baked mine on an insulated cookie sheet for only 8 or 9 minutes (at 375) and they came out perfect. I also used 1 cup of butter-flavored shortening instead of the margarine and shortening combination. The Kalua is the key!

Brownie Pudding

Excellent, elegant, easy dessert, especially served with vanilla ice cream. I added an extra tablespoon of cocoa to batter (along with an extra tablespoon of butter) and to pudding mixture for a deep, rich chocolate. Yum!

I have served this to company twice and to my family many times and every time it's been a huge success. My 10-year old loves it, too. It is a very attractive, colorful salad and easy to make ahead -- just wait until right before serving to add the dressing.

Hawaiian Sweet Bread

This is an excellent bread. My 10-year old and his dad both loved it. It is not too sweet, just right for kids. I substituted organge extract for lemon and added a little more flour and some wheat bran to make it work in my bread machine.
