Yummy Lemon Salmon Burgers

Yes they were yummy! A bit too moist using two eggs. Ended up making four patties. Wish there was more flavor or heat ( next time I might try adding more pepper flakes ). Would make again.

Tres Leches (Milk Cake)

Superb dessert. I have never had Tres Leches no less made one before. I followed the advice of Peggy Ann and used half and half instead of whole milk, though I used the full amount - 2 cups. I let the milk mixture sit overnight before adding the Cool Whip topping ( I used the the low-fat ). Garnished with fresh strawberries and bananas. A bite with the strawberries tasted like a moist short cake and a bite with bananas was like banana creme pie! I really do recommend adding a topping as it made the cake come together.

Oatmeal Peanut Butter Cookies III

Excellent, though not enough filling. The bottoms of my cookies were brown and crunchy - I baked them for 8 min. Might reduce the time I kept them on the sheet from ~>5 min to 1 min plus bake them for 6-7min as I like cookies that are soft. Good news is that once placed in an airtight container, overnight the bottoms became softer. Got very good reviews from wife's coworkers. Great recipe, very rich peanut taste.

Spicy Slow Cooker Mac-n-Cheese

I was really excited to try out this recipe. The final dish came was excellent. I did however make the following modifications. 1. I used Chorizo sausage which I first browned along with a can ( 4 oz. ) of green chiles and around 10 oz of picante sauce ( medium ). Salt and peppered 2. Removed from heat and cut the browned sausage ( 1 lb ) in rounds ( still pink in center ) and added to slow cooker - which already had the cheddar soup and water mixed in. 3. Added a 1/2 packet of taco seasoning. 4. Cooked for an additional hour on High, and added another 3/4 cup water. I also did not stir frequently as I think this defeats the purpose of a slow cooker. 5. Added extra cheddar cheese. I let it this dish sit overnight as well. Very well received by my wife. There was a nice background heat to a traditional baked mac and cheese taste. This was not a standard creamy out of the box Velveeta meal.

Carrot Cake III

Good carrot cake though it turned out a bit different than I expected. First I followed the top review by gneebeanie. The cake turned out darker and drier than I wanted it to. I ended up taking it out of the oven after 40 min (thinking 35 min would have been perfect). Icing was amazing. Lots of pecans in this recipe, I would ask around an confirm that the majority like nuts. After a night of settling the consensus was this cake was very good. Would make again I would just check to make sure cake is not overdone.

Best Big, Fat, Chewy Chocolate Chip Cookie

They were big and chewy! Bottom of cookies were a little too brown for my taste taste. The second batch I cooked for 15 min and were better, though some of the cookie's center were a bit under cooked ( not a bad thing for a chewy cookie ).

Slow Cooker Beef Stew I

This stew was a smash hit with my family. I followed Corinne's suggestions however only used 1/2 packet of McCormick seasoning. I used two onions when browning the meat. I would add at least another stalk of celery as well. I cooked for 4 hours on high and then 3.5 hours on low. Great flavor, great recipe!

Soft Oatmeal Cookies

Turned out well - I made mine with raisins. I would suggest flattening the dough significantly if you like flat cookies. I baked for the full 10 minutes. Cookies were dense and moist.

Pumpkin Casserole

My wife loved it. Great recipe. Followed the recipe pretty much verbatim however less sugar will be used in the future. I think cutting back on the full amount of butter wouldn't hurt as well as the dish is very rich. This was served as a dessert with a side of whipped cream.

Peanut Butter Bars I

Wonderful recipe. My wife eye's lit up after the first bite. Very rich was her comment. I used a gourmet natural peanut butter. I took the advice of another reviewer and refrigerated the peanut butter mixture before adding the chocolate (about 15 - 20 min).

Lemon Bread

Turned out very well. The lemon I had was small/medium and so I used two instead of one. This added a more lemon note which my family enjoyed. I also used confectioner sugar for the glaze instead of white sugar. The final piece was beautiful and very moist. Note: This could be outstanding with a thicker icing instead of just the lemon sugar glaze.
