Lime Chicken Soft Tacos

Delicious! I kept the ingredients the same (expect the oregano) but cooked it differently. I first browned bone in, skin on thighs in a pan with salt and pepper then transfered them to the crock pot and poured sauce over them. I did 5lbs of chicken so I quadrupled the ingredients (those of you with boys know why). 4 hours later I removed the skin and bones and shredded the chicken. This was a make ahead meal so when it was time to eat I put it in a pyrex 9x11 and baked to get a little browning on top. served with Baja sauce as another reviewer suggested (mayo,sour cream, lime juice, zest) which I think put them over the top, shredded cabbage and fresh cilantro. They were devoured! For a side dish I prepared the cilantro lime rice from this site. Sorry boys, there is only enough for a small snack left.

Cabbage Fat-Burning Soup

Pretty darn good for a soup with no fat. I made a half recipe yesterday with exact ingredients. I added red pepper flakes, black pepper and oregano. I find the texture of cooked veggies to be gross, so I used my hand blender and pureed it right in the pot. This made it thicker and the tomato covers up the cabbage flavor. Today I reheated some on the stove and put in some raw shrimp after it was simmering. Yum! Shrimp Cocktail soup

Marinated Flank Steak

Great marinade! I let it marinade for just under 7 hours and it was not tough although I think overnight would help it become even more tender.

Grilled Marinated Shrimp

Love this recipe! We have had this twice inside 2 weeks. Don't alter at all it is perfect! Remember not to add the lemon juice until just before you grill so your shrimps don't get chewy from the acid.

Potato Casserole

This was really good. The only changes I made were using fresh cubed potato and less corn flake (All I had was the precrushed cornflakes used for breading which I will say I don't love)

Ham and Cheese Bowties

My family really liked this recipe. I followed the recipe almost exactly but omitted the salt and used a combo of Sharp and mild cheddar because thats what I had. I didn't measure the ham but im sure I used much more than 4oz. to make it more of entree.

Cheddary Chicken Potpie

We really liked this. These were the changes I made. My chicken was not cooked so I cubbed some breasts and seasoned with Old Bay and pepper. I browned it in a little olive oil and added one clove garlic at the end. For the cheese mixture, the only change I made was sautee some finely minced onion in a very small amount of butter prior to adding other ingredients. We don't care for cooked veggies so we had them as a side dish instead of in the cassarole.

Hearty Breakfast Cookies

Really pretty good. I made two changes...instead of wheat germ I added whey protein powder and instead of 1cup raisins I chopped up a granny smith apple into little pieces which was about 3/4cup and topped off with raisins. I might form them into more of a bar next time and not call them cookies...they don't earn the name cookie but are definately a satisfying healthy snack and I will make them again.

Chicken with Stuffing

Really good. I made a couple of changes which I loved. My chicken breast were huge so I quartered them and seasoned them with Old bay and pepper before I quickly browned them in a small amount of olive oil. I sliced up an onion real thin and added about 1/3 to the bottom of crock (sprayed first) threw in chicken, rest of onion on top with some baby carrots, soup then stuffing. I was in a huge rush and added too much chicken broth to stuffing mix so it ended up as part of the gravy...I'll slow down next time but I had it all done and was back in the car in under 20min.
