This is the ultimate pumpkin pie recipe, I've been making it for over 40 years and my mother was making it before that. This Thanksgiving I made one of this recipe and another from a different recipe on another site that sounded a little more exotic with the addition of cardamom and lemon zest. The Libby's Famous Pumpkin Pie won hands down, no contest. My mother used to make a variation on this recipe by separating the eggs and beating the whites until stiff to fold into the pumpkin mixture just before pouring into the pie shells, baking temp and time the same. Made this way, the great classic taste is retained while giving it a light, almost fluffy, texture.
