Creamy Orange-Ginger Dressing

We started Valentine's dinner with this dressing on a simple salad of spring mix greens, sliced almonds, and mandarin oranges. It was very tasty!

Greek Chicken (Maybe)

I substituted sherry for the muscat wine, and it turned out very well. The only negative thing I can find to say at all is that I found my chicken got a little dry and tough from being in the pan so long after it was finished cooking, to give the sauce time to cook. Still, my husband and I just had it for Valentine's dinner with some green beans amandine and roasted herbed potatoes, and it was delicious! Thanks!

Chicken Pot Pie IX

Apple, Carrot, Or Zucchini Cake

I made this with pink lady apples, and it is AMAZING! It's moist, and neither mushy nor greasy. At first I thought the amount of nutmeg might be too high and might overwhelm the cake, but it turned out to be perfect! I will make this again, for certain. I also have wildly mischievous plans to try it with zucchini, carrot, and apple ALL AT ONCE! It's so crazy, it just might work.

Oatmeal Grapefruit Quick Bread

One big problem with this is that it doesn't even remotely taste of grapefruit. The zest of a whole grapefruit would definitely help. It wouldn't help though with the fact that the bread is far too dense, and that the inside takes 20 minutes longer to cook than the outside, leaving the outside dry and a bit crunchy. I will never ever make this recipe again.

Lincoln Log Cake

I wasn't crazy about the gelatinous texture of the frosting, though others might think it's great. Next time, I think I would use a different frosting.

Tres Leches Cake

This recipe is amazing! The only thing I changed was that I didn't whip any cream to frost the cake with. I stand by the decision - it's moist and creamy enough without it.
