Sauteed Swiss Chard with Parmesan Cheese

LOVE IT - I have Swiss chard in my little city garden and can snip a few leaves to make this quick and delicious recipe for lunch. I used the green onions from my garden as well and using the white part with the garlic and the greens with the chard leaves. I have made it with red wine too- just as good. I like the fact that it uses the stems. Sometimes I throw a few spinach leaves in just for fun.

Ginger-Touched Oatmeal Peanut Butter Cookies

My ginger loving mom liked these cookies a lot but she eats candied ginger alone! The texture was fabulous with a grainy exterior and soft interior. I thought the ginger was too much and I didn't even add a whole cup because it sounded like ALOT. The ginger overwhelmed the peanut butter. I will definitely try again without ginger though because I liked the texture.
