Easy Marinated Pork Tenderloin

Very good, easy, moist, flavorful. Next time I would watch the cooking time more closely, as mine ended up a bit dry (my fault for not watching). I would also omit the salt. Otherwise I loved the flavor of the marinade, and it was good over Sarah's Rice Pilaf, my go-to pilaf.

Mexican Rice III

I should have made sure I had cumin, but I didn't! And my stock was frozen! So I used water and turmeric, believe it or not, and the rice had a beautiful color and delicious flavor. I sauteed the veggies for a few minutes after browning the rice, then added the liquid. It was good with my substitutions so I imagine it will be really great as written.

I agree with all the other posters- the sum is equal to more than the parts- I made it exactly as written and t really is a delicious, simple recipe. This will be a go-to. Those who say it was bland, I agree- just add salt and pepper and you should be good.

Oven Roasted Teriyaki Chicken

Since I discovered this recipe, I make this constantly; it has become a staple in our family. I use honey or brown sugar instead of Splenda, as the original recipe called for. So tasty, my kids cannot get enough of it.

Curried Butternut Squash and Pear Soup

For years, I have been trying to find the perfect butternut squash soup recipe and this might be it. My husband and I both loved it, and it was so easy. The ginger, curry, and pear make it amazing. I pretty much followed the recipe, but used milk because I didn't have half and half, and one large very ripe yellow pear was all I had- and it was plenty. I used my immersion blender, which is easier, safer, and neater. Will definitely make this one again.
