Chicken Salad Sandwiches

Do not add salt if chicken is already salted. Was a little dry, so added some honey. Had a lot of flavor. Served on rolls.

Buttery Rolls

I made these into fruit danish. Tasted just like the name brand ones. After dividing, roll into 10in. ropes. Coil and place in 3 8x8in. square pans. Let rise, then make dent in center and add 1tbs. jam. Bake as directed for rolls. May add a glaze. AMAZING!

Chocolate Pecan Pumpkin Bread

The bread came out very moist and rich tasting. A little sweet for every day though. The bread baked in about 50 min. then I tested with a toothpick. The 20 to 25 min would be just right for muffins.

Hot Pepper Jelly

This is so good. I gave some to a friend. She gave her son a jar. He has asked for a dozen more jars. I used 2 1/2 cups of peppers total. 1/2 cup jalapenos is mild but with good flavor. 1 cup jalapenos is about medium. I like the medium best.

Cranberry Muffins

YUM!!! The first time, made as directed. They were great. On my third time now and playing with recipe. I cut the sugar by a third and added white chocolate chips and walnuts. As good or better than bakery. A delightful treat.

Aunt Mary's Eggplant Balls

I peeled the eggplant. I also used dried parsley. I then rolled these into tiny balls and baked about 15 minutes. I put them on a pizza for my vegetarian daughter. She loved it. I plan to bake some more for the freezer. That way I can just toss them on the pizza frozen and bake like usual. These come out very much like the vegetarian meat substitutes that are so expensive.

Chinese Fried Noodles

Only used 1 packet of the seasoning and a sprinkle of ginger. Also cooked the noodles only 1 minute. this way they keep their curly shape.

Savory Chicken Sandwiches

Very versatile. Very good on Italian rolls. I used all breast with 1/2 cup chicken broth. Taking a page from an Italian beef recipe, I added some Peperoncini peppers. It is delicious, and the leftovers can be used in recipes calling for cooked chicken.

BBQ Sauce

Needs to be simmered. I needed BBQ sauce for pork that I had already shredded. Added this to pork and then simmered. Good texture and good flavor.
