Mom's Zucchini Pancakes

I took other reviewers suggestions and livened things up a bit--added a generous pinch of red pepper flakes and 2 gloves of freshly grated garlic with the onion. Served with lemon wedges. Really good!

Spicy Chipotle Turkey Burgers

This is my go-to turkey burger recipe--it's easy, spicy, flavorful, and moist. Like some other reviewers, I add another chipotle and some fresh garlic but otherwise follow the recipe. It's a winner.

Addictive Sweet Potato Burritos

Delicious. Only made three modifications: used chicken stock instead of water (and only enough to moisten beans sufficiently); used black beans instead of pintos, as recommended by previous reviewers; and added a handful of chopped fresh cilantro to the beans.

Spicy, flavorful, and wonderful. Followed the recipe exactly except for using fresh ginger and omitting the garam masala (at the suggestion of previous reviewers and because it smelled and tasted fabulous without it). Will be making again soon.

Brown Rice and Black Bean Casserole

From previous reviews, it seems that this recipe lends itself to an endless number of variations. Tonight I used it for the basis for a vegetarian Mexican casserole. I followed the basic steps but used the following ingredients: ! cup brown rice cooked in chicken stock, 1 sm onion, 4 cloves garlic , chopped yellow and green pepper (one small each, could use any color), one chopped fresh jalapeno (we like spicy!) cumin, chili powder (1 tbsp) zucchini, canned diced tomatoes, black beans, 1 1/2 cups pepper jack cheese. It was so good my husband and I ate almost all but one modest serving of it. Thankfully, it's reasonably healthy. Next time I'm going to go in a different direction, with brown rick, chicken, onions and garlic, zucchini, carrots, mushrooms, cannelli beans, tarragon or sage, and gruyere cheese. But I'll definitely be coming back to the one we devoured tonight--it's a keeper!
