Peanut Butter Vegetable Chicken Soup

this was pretty good! i doubled the veggies, added peas and omitted the onions and green peppers. instead of using potatoes i made dumplings instead. the peanut butter was very subtle.

The Best Sweet and Sour Meatballs

these were pretty good. i thought the sauce was a little too sweet so i added some lemon juice to even that out. the meatballs were so tender and yummy. my husband loved this. next time i think i will cut down on the sugar and possibly leave the flour out until the very end so it doesn't get sticky.

Sweet Potato Enchiladas

surprisingly delicious! i love sweet potatoes but the mixture of ingredients had me questioning it. it was amazing though! i used white sweet potatoes (didn't know it until i got home and started peeling the skin off and it wasn't orange, nevertheless, just as good) and also used fat free cream cheese to help cut down on the calories and fat. i also added a can of chicken, subbed sweet white onion for green and used green enchilada sauce instead of red. SOOOO good. the green sauce is a MUST! it complements the enchiladas so well. a little tip to cut down on the time is to peel and cube the sweet potatoes and boil them for fifteen minutes. cuts down about 20 minutes on cooking time.

very good recipe. a different take on chips and salsa. i tried making the tortilla chips but ran out of time so i just bought some cinnamon and sugar pita chips. BUT with time the homemade ones are SOOOO much better.

Outrageous Warm Chicken Nacho Dip

this was SOOOO good!!! it was a little runny but i think that's because i didn't drain the tomatoes all the way. besides that i was very impressed. i didn't use jalapenos because my husband hates spicy, so i just doubled on the chile peppers to give it a little zing without the heat.

Cheeseburger Soup I

this was oh so yummy! i was surprised on how little time it took for it to be ready.....even with all the chopping. it for sure doesn't take 50 minutes total if you cut the potatoes in small dime size pieces. to cut down on the calories and fat i substituted beef for ground turkey breast (normal ground turkey is just as bad for you and ground beef....just so you know) as well as light sour cream and 1% milk. i tried to find a reduced fat cheese but had no luck unless i went with something other than cheddar. i also used shredded cheese so i didn't add to the chopping process and used more than two cups (used about four.) so good on a cold winter night, very filling and hearty.

Apple Pie by Grandma Ople

OH WOW! this is the BEST apple pie i have EVER had! i am not the biggest fan of apple pie but the house i was going to for thanksgiving requested i make it. so i did and i am not hooked. i will never turn to another recipe. the only thing i did different was do a full crust because i didn't want to chance a lattice being that i've never done it before. i just brushed the top with the glaze and it turned out fantastic!!

Tomato Chicken Parmesan

ok so the only reason i tried this recipe was because of the picture. it made it look very appetizing. normally i do NOT like chicken parm. i think it tastes like dog food, but this recipe is AMAZING!!! i was totally shocked and so happy it turned out wonderful. the ONLY thing i did different was use mozzarella cheese instead of pepper jack. this is a definite recipe for the books.

Chicken and Cheese Stuffed Jumbo Shells

this was pretty good. it was fairly easy to make too, even stuffing the shells was simple. i made the stuffing the night before because i work late. the only thing i wasn't too fond of was the breadcrumbs. it's a little too mushy for me. next time i will substitute stuffing instead. other than that it was delicious and for sure a recipe for the books.

Mexican Lasagna II

overall pretty good. i used turkey meat instead and only one can of refried beans. i don't like flour tortillas when they are reheated because they get mushy so i used corn tortillas, which made the recipe. it was a pretty dry so next time i might add something to make it more wet. also added a can of corn to the mix along with 4 oz of cream cheese.

Best Chocolate Chip Cookies

very good recipe. some of the reviews state that the cookies flatted a lot. i found that you can't handle the dough at all. so when you scoop the dough up with the spoon just dump it on the pan. don't roll it in your hand. also between each batch make sure to put the dough in the fridge. nake sure to follow the recipe to the T. you can't alter the amounts at all or it won’t work. make sure the butter is a room temperature and do NOT melt it. it doesn't work if you do. i have learned from trial and error. mine turned out wonderful and delicious.

PJ's Sweet Potato Mash

these were fantastic. i didn't bake them in the oven though. i just peeled them, cut them in to cubes and then boiled them for about 15 minutes. then i went to step 2. i was very skeptical about using horseradish but it made the dish. they are so tasty. i served them along side the brown sugar meatloaf from this site and some broccoli. i think i like these better than regular mashed potatoes.

Chicken Enchiladas

4 for taste and 1 for prep. no matter what i did the corn tortilla's would fall apart. i warmed them up, dipped them in water, broth and enchilada sauce....nothing worked. besides that they were very tasty. i used three cans of enchilada sauce and added a can of corn. so yummy! will make again but leave out the tortilla next time and use it as a chip dip!!!

these were very yummy. i left out the onion and added some powdered onion instead and used turkey meat and flour tortilla's. very flavorful and scrumptous. a very easy and fast "go to" meal i will for sure make often.

Family Favorite Chicken Lo Mein

i am rating this a five because i don't want others to shy away from this recipe. if there were more votes than i would rate it a four. this was really good! i was nervous by how little ingredients it called for but i was shocked to find it very flavorful. i only used a half box of pasta like others suggested and i am glad i did. the broth to pasta ratio was spot on. i didn't have black bean and garlic sauce (could not find it anywhere!!) so i used oyster sauce instead. great recipe that i will make over and over again!

Easy OREO Truffles

oh these were yummy! not as easy as i hoped for because the chocolate was a pain but the time and effort were well worth it! i refrigerated the oreo mix before i rolled them in to balls and then again after i rolled them. i think it made it much easier to roll in the chocolate. brought them to my company pot luck and they were devoured!!
