Ricotta Gnocchi

Really delicious. I make whipped cream from scratch and I replaces one package of cream cheese with finely chopped bocconini cheese and used have 70% dark chocolate and half semisweet along with frozen raspberry and the juice from preserves. Instead of mixing it uniformly I folded in the whipped cream so it became marbled and then poured it into the pan. It was PERFECT. I only had blanched almonds which I found were lacking in flavour when roasted, but next time I'll fix that.

Soft Oatmeal Cookies

I've made these cookies at least a dozen times already and love it each time! I've found that if you live closer to the ocean making the cookies smaller (3/4 walnut) they tend to caramelize much better. Also if you want to add chocolate chips or raisins 1 1/2 cup makes the perfect balance!

Asparagus Casserole I

Pretty good recipe overall. It wasn't fantastic though. I did change things up a little bit and that might have been why. I used canned ham simply because that was all I had in the house. That's the same reason I had to use dried parsley and no tapioca. I also added about 3 cups of rottini instead of separately making rice. If I needed to use the ingredients I might make it again, but I will pass the recipe on to other university students in need for a simple satisfying meal.
