Smoky Four Cheese Macaroni Bake

Reviewed: Dec. 26, 2010
Tried this for Christmas dinner. We followed the recipe exactly and it was delicious. Everyone commented on how tasty the mac & cheese was and everyone had seconds (if not thirds) and said they wanted the recipe. Only downside is that the kids did not care for it (not plain enough for their immature pallets I guess). Next time I will try with crumbled bacon (didn't try this time as our main course was ham). Thanks for this yummy recipe Eshel! :)

Easiest Eggplant

Reviewed: Mar. 23, 2010
So simple & delicious! I too used lowfat mayo and added garlic powder, salt, pepper & a bit of finely shredded cheese to the Panko bread crumbs (I didn't have parm. as others have indicated they added). I also sprayed the foil lined pan with cooking spray which made flipping them easy. After baking, I topped each slice with a teaspoon of marinara and sprinkled a bit more shredded cheese on top. Super yummy - thank you for sharing!!

Banana Banana Bread

Reviewed: Dec. 30, 2009
Yummm! I baked in a muffin tin and, like previous reviewers did, also added a bit of cinnamon and nutmeg and I also sprinkled cinnamon/sugar on top of each muffin before putting into the oven. I cooked them for 24 minutes at 325 and they came out so yummy! Thanks Shelley and other reviewers for your help in creating some bananalicious muffins!!!

Slow Cooker Cranberry Pork

Reviewed: Dec. 9, 2009
This was super easy and delicious! I used a 2 lb. pork tenderloin, seasoned with pepper and garlic salt. Cooked on low for 5 hours and then on high for the last hour (wanted to make sure it WAS COOKED!) It was so super tender and shredded easily. I served it over white rice and both my kids loved it. I mixed a bit of curry in it the next day and it was even better. I think it would also be great on a sandwich roll with a dash of curry powder and chopped apple! (Mmmmm, there's my lunch for tomorrow!) :) I'll, for sure, make this again. Thanks for sharing!

Grilled Salmon with Creamy Tarragon Sauce

Reviewed: Nov. 17, 2009
This sauce is so super yummy! I think it would be great as a spread for a chicken breast sandwich too. The only tweeking I did was substituted dried tarrogon leaves for fresh, as my grocery store was out, and added about a tablespoon of dried dill. We didn't cook the salmon with the sauce on it. (My husband isn't crazy about cooking salmon in any type of sauce as he prefers his salmon with just a bit of lemon juice and salt and pepper.) We squeezed a bit of lime juice on the salmon and salted and peppered a bit. Then we grilled the salmon and served with the sauce on the side. My hubby loved it and actually spread it on his salmon too! The kids wouldn't go near it (as there was Tabasco sauce in it) but that just meant more for us! Will most definitely be making this again and again. Thanks Joyce T!

Forgot to mention that you may want to grease mug or spray with cooking spray first. Then add ingredients.

Hawaiian Hot Dog Surprise

Reviewed: Nov. 11, 2009
I decided to make a 1/2 batch to test it out. I took the advice to cut sugar in 1/2, thank goodness I did that because it was still SUPER sweet! I think next time I will cut it down even a bit more... ;)~ I did also include about 2 tablespoons dijon mustard to help cut the sweet a bit and it seemed to help. Was so super easy, quick, fun and yummy too! Not so much a "dinner" type of entree but would be great for potluck, party, kids party, big gathering, etc. Thanks for posting D Cotton!! :)

Cordon Bleu Chicken Rolls

Reviewed: Feb. 6, 2009
Yum! My husband can ALWAYS find something he doesn't like about something I make. The only thing he said about this one was "Mmmm, this is really good...The sauce is great!" I just about fell over! :) The kids loved it too! Woo hoo, a keeper!!!
