Sherry Apple Pork Chops

Microwave version; I made this tonight and it was yuummmm! I seared thin chops in olive oil and garlic till almost done, cooked the apples and raisins in same oil, added other ingrediants to skillet, cooked 5 minuets. put 2 chops in bottom of a glass meatloaf pan put 1/2 of apple mixture on top, then 2 chops and other half. covered with saran wrap, poked a steam hole and microwaved for 10 minuets at 70% power........awesome!

Unbaked Meringue

It is so funny to me that people rate a perfect recipe unfairly becaue they tried to "bake" a recipe that says UNBAKED meringue!!! It is perfect, just what I needed Saundra!! FYI the other meringue recipe by Saundra called Meringue II on this site is the best ever for baking :)

Baked Salmon with Coconut Crust

Sooooooo yummmmmm! I have found my salmon recipe for life. I served with steamed veggies over jasmin rice and my teenager is begging me to make this again. Thanks for another great recipe!

Meringue II

I will never put whipped cream on my banana pudding again! It holds up in the fridge and keeps my pudding from turning to soup the way whipped cream does. Not only that but I took it to a ppotluck and didnt have to keep it refridgerated until the last minute like whipped topping. Its as good as it gets and sooo easy! I add a little blackwalnut extract and then topped with toasted walnuts and it got rave reviews. Thanks!!

White Chocolate Raspberry Cheesecake

This was easy, and everyone loved it so I am making another one for new years eve. I wish the recipe was clearer on how to do the rasberry middle, but it is still 5 stars for taste and presentation. I used a regular graham crust, but think if I had done the chocolate cookie one it would have had more of an chocolate flavor and I will next time. It was yummmm...

Easy Pumpkin Muffins

Watermelon Rind Preserves

YUMMMMMMMY! We love this on hot buttered bread or biscuits. I used a bit more red food coloring and food proccessor to make it less chunky and more like apple butter texture. I froze the extra syrup to use as a starter for the next batch. Thanks!

Absolute Mexican Cornbread

I have made this twice. The first time I folowed exactly, except omitted the green chile's. It was greasy,a little crumbly and a little sweet. The taste was still out of this world and we didnt have enough! So the second time I made it I doubled the recipe, and I followed other reviews and cut the butter and sugar by half and added an extra egg for better hold together and cut the baking powder by 1 tsp so it wouldnt rise as much. I think it was perfect. I will probably never use another recipe. Ever. It's called mexican but without the chile I call it southern.
