Chicken Pot Pie VIII

This was delicious! I did cheat and bought a crust, but followed the rest of the recipe. IMPORTANT: COOK THE POTATOES FIRST! Maybe boil them for a while. I didn't...since the recipe didn't specify, I thought that maybe they would just cook up while baking. They didn't...they were raw, and we had to pick them out. We also used frozen carrots/peas/corn for the veggies...and they came out just fine. The gravy was soooo simple to make, and was so delicious! I will definitely make this again...and I will cook the poataoes first when I do!

Smoky Mountain Chicken

I really liked this! I also tried it with honey mustard (which I usually like better), but the recipe was much better witht he bbq sauce. Very good!

Blueberry Cream Dessert

This was so easy to make and a hit at Easter dinner. It is very simple and not overly sweet. I made the whipped cream using heavy cream, but I suspect that you could buy a whipped cream to make it even easier. Very tasty!

Banana Peanut Butter Cheesecake aka "The Elvis"

This was very good! I decided to use a springform pan, but still did the hot water bath. Be careful with this...I made two cheesecakes this way. One turned out great. On the second, I didn't have the springform pan sealed quite right, and the crust got soggy (the water must have leaked in a bit). Also...be sure to do just two small-medium bananas. I didn't think it looked like a lot and so added an extra banana...and it overwhelmed the peanut butter. Next time, I will stick to the recipe! Still, very good! I covered it with a ganache made from a cup or so of choocolate chips melted into about 1/5 cups of hevy whipping cream, with a teaspoon of vanilla added.

Slow-Cooker Lasagna

Delicious and easy! I doubled the recipe and used lean beef. I also used whole wheat lasagna noodles. Very good!

Irish Shepherd's Pie

This was delicious! Because ground lamb was very expensive, I used one pound of ground lamb and one pound of ground beef (instead of two pounds of lamb). Next time, I will not add so much water to the meat mixture because it was a little "soupy." Also, since I adde dth ewhole block of Dubliner cheese (shredded), the potatoes were a bit thick to spread, so I would add more milk. But, overall, easy to make and very tasty!

Chicken Caprese

Soooo good and easy! I used roma tomatoes and chopped them up before putting them on the chicken. I also could not find buffalo mozzarella, so used a block of mozarella and sliced it up. Tasty!

Crumbly Lemon Bundt Cake with Glaze

This was absoultely, positively, delicious!!! It was very easy to make. Because I made it in a stoneware bundt pan, I ended up cooking it an extra 20 minutes. It came out of the pan beautifully. The glaze pools around the cake, so I kept spooning it back on until the whole cake was covered. Because of this, I'll pour the glaze on a separate pan next time and tansfer it to the serving dish when it has hardened a bit (just to make it a little neater). I made it for Valentine's Day, so after adding the glaze, I added some pink and white heart-shaped sprinkles while it was still warm, and they set into the glaze. It looked beautiful! The glaze soaked into the cake at the bottom and made a crust all around and the taste was just perfect. I will be making this many times!

White Chocolate Orange Cookies

These were tasty and very sweet. I think that next time, I may just add half the amount of white chocolate chips so that more orange flavor comes through and they aren't so sweet (but that is just personal preference). These were easty to make, too.

Caprese Quiche

This was delicious! I omitted the onions because my boyfriend doesn't like them, but I'm sure they would be very good in this recipe. I also added a bit of parmesan cheese...maybe about an ounce or two. It was easy to make and very tasty!

Ham and Cheesy Potato Dinner

This was really good and really simple! I used regular potatoes instead of frozen and didn't add the onions and peppers (personal preference). I ended up using four whole russet potatoes. I also used cream of mushroom instead of cream of celery soup - again, personal preference. It was really very good! Next time, however, I may cube the ham before adding it just to make it easier to serve when finished.

Fabulous Homemade Bread

This was SOOOOO good! I have never made bread before, and don't have a large mixer with a dough hook, so I did it by hand. It was quite easy, and the bread is probably the best bread I have ever tasted. We ate it with spaghetti one night, and with soup the next. I will definitely make this again!

Chicken with Garlic, Basil, and Parsley

Oh, this was so easy and so delicious! I was worried it would be too plain, but the chicken made it's own broth as it cooked, and it was very juicy. I did end up cooking it about 20 minutes longer than the recipe said, but I used 6 chicken breast halves instead of 4. I omitted the red pepper flakes, used fresh parsley and basil (about a tablespoon each), and added about a tablespoon of olive oil and a tablespoon of balsamic vinegar over the chicken. The, I chopped the tomatoes and added another tablespoon each of the vinegar and olive oil over that . Finally, for the last 15 minutes of cooking, I added about a cup of reduced-fat feta. This was SOOOOO good!

Sour Cream Burgers

We really enjoyed these! I cooked them on the stove, so I had no problems with them falling apart. I also used panko bread crumbs in the recipe. They were a little salty for me...probably from the onion soup mix. Maybe next time I will use only half the package. But these were simple and tasty!
