Eggplant Parmesan I

Delicious delicious! This was very easy and my friends loved it. I didn't have ricotta cheese at hand so I substituted with extra soft tofu and no one realized until I said anything. I wish I had leftovers.

Quick Quiche

French Toast Casserole

It saved a whole loaf of stale bread! I like making french toast this way compared to pan frying. It tastes less 'eggy' and it's crunchier this way, too.

Baked Dijon Salmon

Perfect taste. It was also a hit when I brought it to a pot-luck event. I used olive oil instead of butter to be healthier, added chopped walnuts to keep it moist, and I seasoned the breadcrumbs to my liking. Yummy.

Chicken Gruyere with Sauteed Mushrooms

It was very easy to make. The flavors were simple, so I will add more herbs next time and use better wine. This is great for comfort food.

Creamy Rice Pudding

I didn't have to alter the recipe and it turned out great. I do agree that you should use medium grain rice.

Classic Lasagna

This was really easy to make. I used no-boil noodles and ground turkey, though. Because of the no-boils, I had to place the noodles away from the sides of the pan because they expand. The cooking time was shortened from 90 minutes to 60. And I also took the advice of adding old red wine at the end of the meat sauce cooking time. Oh, and of course add the top layer of mozzarella at the end.
