Patti's Mussels a la Mariniere

Yum Yum Yum, Delicious!!! Perfect just the way it is. My husband has loved mussels since he was a child, where he lived in various parts of Europe. :) Great with a leafy green salad and some crusty bread.

Easy Pasta Fagioli

This is SO great and healthy. I have used pureed tomato instead of tomato sauce and it turn out nice as well. Make sure your veggies and herbs are fresh if possible, it makes a world of difference. Yum Yum Yum, summer or winter soup!

Ethiopian Vegetable Bowl

This was tastier than I imagined it would be. My husband, who is a meat lover, actually enjoyed it. Of couse he said he thought it would be great with beef stew meat. :) I think lamb would be a good choice. We did eat this meatless, but I did sprinkle a small bit of good fresh goat cheese on top. Yum. The house smelled wonderful while cooking this. I would suggest cutting the potatoes rather small so that they get nice and soft. I cut mine in larger cubes and had to cook this an additional 45 minutes and they were still rather hard. Overall, this was good, and the hubby requests it again.

Brownie Pudding

Delicious and oh so very decadent! My husband is dealing with extremely high cholesterol so I have done everything I can to doctor even the healthier recipes. I have made a few modifications to this recipe. For example, I used whole wheat flour in place of all purpose. I used coconut oil in place of vegetable shortening. I added about a 1/2 teaspoon of cinnamon to the "brownie". I also added a palm full of dark chocolate semi sweet chips to the brownie. This was soooooo very rich. The hubby topped it with fat free chocolate frozen yogurt, lite cool whip, chocolate syrup, and sprinkles!!!! I do try. ;-) I will be making this for him again.

Red Snapper Livornese

This was a delicious dinner. I chopped the olives as well so that they were a little smaller, and I used one can of petite diced tomatoes instead of chopped whole tomatoes. I also added a small can of tomato sauce. I served this over pasta instead of rice, simply because we have eaten so much rice lately. I used a small rigatoni. Husband says he would like this again. The sauce could deliciously be converted into a chicken dish as well. Yum Yum.

Apple Pie Filling

Great! I scaled this back to make 4 cups worth of apples when wanting some apple enchiladas one night. I used half brown and half demera sugar instead of white and I increased the cinnamon x3. Easy and beautiful filling!

Curry Chicken Salad

I love to save time so I cooked a couple extra chicken breasts in the oven tonight at dinner. I used those to make this chix salad. I added a palm full of raisens. Yummy!

Tantalizing Turkey and Blue Cheese Meatballs

Yummy! I did change the recipe up just a bit. I used two whole eggs instead of 3 egg whites. Almost double the breadcrumbs. Omitted the jalapenos and doubled the blue cheese. Drizzled balsamic reduction over these. Yum!

Honey Oatmeal Cookies

Not bad tasting, and very easy. I substituted raw honey, i can't believe it's not butter, whole wheat flour, and egg beaters and it still turned out lovely. I did add a little cinnamon, and to the second and third batches added some dried cherries and dark choco chips. I would make this one again.
