Refried Beans Without the Refry

I made this and its fantastic! I did cut the salt to 2 tsp per other reviews then salted to taste when I served it. We mixed in a little fresh salsa on our plates and it went from great to Amazing!

Slow Cooker Chicken Taco Soup

Followed advice from other reviewers & added 1 tsp garlic powder, 1/2 tsp cummin & 4 T Echols taco seasoning. Used pinto beans instead of chili beans. Ended up using 16oz can of diced tomatoes and about 1/2c of diced green chilies since I didn't have then premixed. Also used a white onion. It was good last night, today for lunch it was dynamite with sour cream and sharp cheddar!

Baked Honey Mustard Chicken

Was good, would be really good served over a fresh spinach salad with the honey mustard. Marinated the chicken for a few hours and used honey mustard rather then regular mustard.

San Antonio Taco Salad

Was really good, served it with shredded lettuce, chopped tomato's and green onions with tortilla chips for the dairy allergic kids. Added sharp cheddar and sour cream to mine, was as good as a restaurant!

Sweet and Sour Chicken III

Fantastic! I followed everyone else's advice about using a whole can of pineapple and doubling the sauce stuff (minus the soy sauce) and used a whole red and green bell pepper each.

Pumpkin Pancakes

We make this gluten free, just do a direct exchange for the flour with Bobs Red Mill All Purpose Baking Flour (this is the only recipe I ever use the stuff for and it works well and hides the bean flavor of the blend.) So if your GF and missing pumpkin pancakes try this one, its fantastic! One last thing... you MUST eat it with REAL maple syrup, seriously, the fake stuff just won't cut it with these yummy pancakes!

Southwestern-Flavored Ground Beef or Turkey for Tacos & Salad

Quick and Easy Chicken Noodle Soup

This was fantastic! I made a few changes based on what I had on hand plus I needed it to be gluten free. For the chicken I cooked chicken breasts in a crock pot with salt/fresh cracked pepper/poultry seasoning/couple whole cloves and a couple bay leaves. I left it to cool over night in the fridge in the pot which makes the breast really tender. (I did up a large pot full for a number of meals) I used Earth Balance margarine since we can't do dairy. I didn't have chicken or veggie broth so I used the broth from the crock pot after it had separated. I added 2-3 times the basil and oregano called for and for the noodles I used Trader Joes Rice Sticks traditional Thai style pasta broken into pieces about 1 inch each. It came out perfect and even my super picky child liked it.

I followed the directions and the stewed tomato's were really over powering and it was awful. I ended up throwing it out and making regular salsa with fresh tomato's.
