Great recipe. I tried using flour tortillas and corn to see which tasted better. The corn definitely won. It tasted more authentically Mexican.

Corned Beef and Cabbage

Very good and easy. I think it could use a little bit more spice next time, but I'll definitely make it again. The corned beef was so tender it was like eating pot roast. Delicious!

Delicious Ham and Potato Soup

I thought this was good, but a little bland. I added a lot more salt and pepper than called for and it still needed something. I'd make it again, but this time add carrots and try to spice it up a little.

Peppermint Brittle

Delicious! I'll never buy peppermint bark again. I did as another reviewer suggested and strained out the big chunks of peppermint to put on top and mixed the powdery peppermint in with the white chocolate. This would make a great hostess gift in a nice tin for Xmas.

Cabbage Rolls II

This was the first time I ever made cabbage rolls and I was surpised at how easy it was. These tasted good, the filling was good, but I thought the sauce was a little too sweet. Everyone else liked them a lot. I think it may have just been me! I'm going to try these again but tweak it a little. Great recipe overall though.

Herb Roasted Pork

Delicious!! I doubled the rub and the glaze for my 4.5 lb pork loin and it was perfect. I used apple cider vinegar instead of regular, but other than that I followed the recipe as written. It cooked way faster than I thought it would, so I only was able to put the glaze on the last 15 minutes or so while it was cooking. After it was done though, I poured the rest in the pan and spooned a little on each plate as I served it. Great recipe!

Slow Cooker Chicken Taco Soup

This deserves even more stars! Super easy and really, really tasty. I made it as written and used the homemade taco seasoning, so it had a little kick. Served it with Spanish rice and cheese quesadillas. Delicious recipe!

Crustless Spinach Quiche

Delicious! You won't even miss the crust! I added one red bell pepper and used two cups of mild cheddar and one cup of mozzarella. It tasted even better reheated in the microwave the next day. Great for stay-over guests.

Holiday Chicken Salad

Great recipe! I modified it a bit. The chicken I used was the "Moist Garlic Chicken" from this site. I omitted the green pepper and pecans and added halved grapes and diced apples. I've made this a few times with Craisins and once with dried cherries and both taste delicious. I usually serve this with Hawaiian bread rolls, wheat pitas and some whole grain crackers and just let my guests put the salad on whatever they want. My favorite is the Hawaiian bread. The sweetness of the bread really makes the chicken salad stand out.

Absolutely delicious! I used granny smith apples, raspberries, strawberries and blueberries with red raspberry preserves. We ate it with Trader Joe's cinammon pita chips and it was terrific. Definitely a keeper!

Egg-Free Dairy-Free Nut-Free Cake

Delicious, easy recipe. The only thing I omitted was the chocolate chips, but they taste moist and chocolatey without them. I make these as cupcakes (350 degrees for 20 minutes), frost them with Pillsbury frosting (dairy and egg-free), and freeze them. That way I can easily bring a few to birthday parties so my son doesn't feel left out by not having all the treats at the party.

Eclair Cake

Delicious! The longer it sits in the fridge, the tastier it gets. I used the whole tub of frosting (microwaving it for 30 seconds for easy spreading) and thought it was a little too chocolatey. Everyone else thought it was perfect though. Definitely a keeper. It took less than 10 minutes to put together. Perfect summertime dessert!

Asian Orange Chicken

This was very tasty. I must have done something wrong because most of the breading fell off in the frying pan, but the taste of the chicken and the sauce was delicious. I marinated the chicken for 24 hours, so that might be why it was so good. I also kept it warm in the oven at 250 degrees while I was making the sauce. And since most of the breading was off the chicken already, I didn't want to lose any more, so I just poured the sauce on top. I'll definitely be making this again.

BBQ Pork for Sandwiches

Delicious! I used a 4.5 lb pork loin roast and cooked it in the slow cooker for just about 10 hours on low. It fell apart with hardly any assistance from me it was so tender! I put about 1 cup of the broth into the broasting pan with the meat and approximately 20 oz of Sweet Baby Ray's bbq sauce. Then, just like the recipe called for, I baked it for 30 minutes. It was phenomenal! I will definitely be making this one again.

Amazing Whole Wheat Pizza Crust

Absolutely delicious! I tweaked it just a bit. Since I'm doing South Beach, I used 3-1/4 c of whole wheat flour and no white flour. I also added 1 tbl of basil and 1/2 tbl of oregano to the mix. I used the dough cycle on my bread machine. I baked the crust at 500 degrees for 4 minutes and then put the ingredients on and baked it for an additional 6 minutes at 425 degrees. It came out crispy on the outside and chewy inside. What a great recipe and so easy when you use a bread machine! Since I had plenty of dough left over, I used it to make some breadsticks. I baked them for 3 minutes at 450 degrees, took them out of the oven and brushed them with melted Smart Balance spread, sprinkled a mixture of parmesan cheese and Kosher salt on the top, and baked them for an additional 4 minutes. We dipped them in the leftover pizza sauce. So good! And since I didn't have to feel guilty eating pizza since I'm on South Beach, they were even better. I will definitely be making this recipe again!

Cheesy Ham and Hash Brown Casserole

I usually don't find things salty that other people do, but to me this was very, very salty. I'll probably try to make this again using low sodium soup. It was easy and fast to make and I thought it was really good except for how salty it was. I added a small diced onion but otherwise left the recipe as written.
