Colleen's Slow Cooker Jambalaya

This was so easy and everyone enjoyed it! The only time consuming part is the chopping. Served over brown rice. Very good!

Pork Fried Rice

Delicious!! I left out the broccoli b/c I made stir fried veggies on the side with broccoli in it. Just used carrots, peas and green onion. Surprisingly good and very easy!! Whole family loved it!

Stir Fried Sesame Vegetables with Rice

Delicious! I used broccoli, snow peas and red pepper. Just added soy sauce to taste and drizzled a teensy bit of sesame oil at the end (I think sesame oil can be overpowering.) i didn't serve it over rice b/c we were having pork fried rice. But could easily add shrimp or chicken and serve over rice for a complete meal. Very good! Husband loved it!!

No Bake Peanut Butter Pie

This was so good!! I tweaked a few things, but certain it would be delicious just as written. I used 3/4 cup 2% milk (that's all I had of 2%. Didn't want to use skim). Used a prepared Oreo crust and stole the topping from another pie recipe--after the pie had frozen, I heated hot fudge and made a thin layer on top of the pie. Put it in the freezer just until firm and then added about a 1/4 inch thick layer of Cool Whip on top of that and froze that. Then piped hot fudge through a plastic ziptop bag, cutting a small hole in the corner and drizzling it in a zigzag decoration on top. The pie does need to sit out for about 30 mins. before serving, but the consistency is so creamy!! My whole family loved it!!! The peanut butter filling is so good, that you really don't need to add all the topping that I did. I just thought it would look pretty and I love hot fudge!

Dad's Leftover Turkey Pot Pie

Really good!!! Based on someone else's suggestion, I only used 1 pie crust for the top and it was perfect!! Will always make this with my leftover turkey.

Garlic Chicken

Crunchy Oven Fried Tilapia

Enjoyed this! Used the whole egg and seasoned bread crumbs, so I eliminated the basil. Also added garlic powder and onion powder, per previous reviewer's suggestion. Very good!

Chicken Noodle Soup

Couldn't believe how good this turned out! It was so simple! I used leftover rotisserie chicken and followed the recommendation to use 2 boxes of organic chicken broth and 4 cups boxed chicken stock in place of water and bouillon (I ended up adding an additional can of chicken broth to allow for enough liquid to cook the noodles). I also added a bag of frozen mixed vegetables when I added the noodles. It was delicious!

Kelsey's Favorite Stuffed Green Peppers

These were great! However, couple of suggestions-do not cook the peppers for 10 mins. unless you like them super soft (mushy). Next time I will just blanch them for 2-3 mins. Definitely double the sauce. I added Italian seasoning to the sauce. I had an Italian cheese blend (pizza blend) in the frig which I sprinkled on top and LOVED it!!

Spicy Italian Sausage and Black Bean Soup

I really enjoyed this recipe. What's not to love, w/all the different flavors/ingredients that go into it! I did make a few minor changes-I left the potato out b/c didn't think it was necessary; used wheat rotini and couldn't tell the difference; added a handful of tortellini and added extra beef broth to help cook the pasta. The black beans go unnoticed, but left them in b/c i love them! Yummy!

Actually Delicious Turkey Burgers

I was skeptical, but pleasantly surprised at how tasty and moist these turned out. I used only 1 1/3 lbs. turkey (1 pkg.) for 2 of us, but left the measurements for the seasonings almost the same as listed b/c I was afraid they'd turn out bland. I did add Worcestershire, per a recommendation and I used 1 whole egg instead of egg white. The key is to cook them on med. slowly so they don't dry out. I will make these again!
