Taco Casserole

I took the some of the tips of other reviews when I made this. I replaced the diced tomatoes with salsa (half fresh from local market and other half jarred) and added frozen corn and a can of black beans (drained and rinsed). And less noodles. I also used some fresh tortilla and cut them in triangles and fried them in tablespoon oil. When I put it together I laired ½ mix on the bottom and then some tortillas and the rest of the mix and some more tortillas and cheese. I may have used more cheese than the recipe said.

Buttery Corn Bread

It came out good; I just had to make sure not to over bake it. The 3rd time I made it - I made it with 2 c flour and 1 1/3 c cornmeal and added about 1/4 c honey, it came out nice and moist and with a definite corn flavor.

Santa Fe Rice Salad

It was a big hit, even with my Mexican sister in-law. I made it without the avocado (I did not have one). I also added a can of drained/rinsed red beans. The dressing, though simple was real good. Unique pot luck dish

Asian Coleslaw

It is defiantly not your average coleslaw. I love the Asian flare. The peanut, ginger and garlic…. How could you go wrong? The dressing could be put on top of all kinds of dishes. This salad, I would not change a thing. Make it from scratch, not a bag of coleslaw mix; it real does make a difference. A couple tips; peel and grate the carrots (julienne is nice but takes time); freezes the ginger and grate it (on the small side), the skin will come off on the out side of the grater. If the flavor is to strong, just use powdered garlic and ginger in its place (to taste).
