Easy Pumpkin Muffins

Delicious! More like a cake than a hearty-breakfast-kind-of-muffin - obviously since it uses a cake mix. I added 1 egg and just a little oil since I only had about 2/3 can of pumpkin. Would be a fantastic cupcake with some cream cheese frosting.

Zucchini Alfredo

Definitely 5 starts with a few extras thrown in. Per other reviewers I added some sliced mushrooms, chopped onion, shredded carrot and doubled up on the garlic. With extra veggies you might increase the sauce to 3/4 cup milk and 6 oz cream cheese. I'm not a big basil fan but, I agree that the basil really makes it special. This was awesome. . .my 4-year-old said it was better than McDonald's chicken nuggets (her all-time fave) - WOW!!

Oatmeal Chocolate Chip Muffins

Really nice muffin! Not too sweet as it's written. I omitted the pecans and didn't sprinkle the extra brown sugar on top, but besides that I followed the recipe exactly. Made mini muffins for the kids and the baking time at 400 was 14 minutes.

Roasted Chicken with Risotto and Caramelized Onions

Even though I made some slight changes, I give this a 5 because it would still be amazing as it's written. I cooked 2 chicken breasts - on the stove top - in about 6 cups of water seasoned with salt, pepper and onion powder. After taking out my cooked chicken, I used the broth for cooking my arborio rice. With the advice of others, I added an extra onion. Also tossed in some mushrooms and fresh garlic as the onions started caramelizing. Stirred in some thinly sliced zucchini to the onions mixture when I added the balsamic vinegar, after taking it off the heat. Wanted to "bulk it up" a bit by adding veggies to make it a well-rounded meal. This fed my family of 4 (2 adults, 2 small children) with some leftovers for my lunch tomorrow! This was AMAZING!! Will definitely make it again, but only on the weekend when I have a little more time - and my husband to help with the kids.

Chocolate Chocolate Chip Sour Cream Pound Cake

This cake is awesome! I do quite a lot of baking and this is one of my favorite cakes ever. The texture is velvety smooth. Really perfect with a cup of tea or coffee. It has a really nice subtle chocolate flavor that was just right for me. I didn't make any changes to the recipe and I have made it twice. I'm normally one to take shortcuts and rush through a recipe (as I have two young children) but I really took my time both times I made this cake...following every step. I will definitely keep this one on file and make it again and again!
