Chicken Breasts Pierre

Frankly, I was terribly disappointed with the flavor and the strange mix of ingredients. I expected more because of the positive reviews. The cooking time was way too long, making the chicken dry.

Banana Yogurt Muffins

These were delightfully fluffy and full of flavor. Who knew that a container of yogurt and bran flakes could make such a light and airy, rich-tasting muffin? This is is now my go-to recipe! Thank you for submitting it.

Classic Rice Pilaf

This makes perfect rice every time. It also works well as an all-in-one-pot meal. I diced some chicken breasts and browned them with the butter and olive oil and onions. Before baking, I added pre-blanched vegetables, some frozen peas, and parsley. My husband complimented me on the dinner.

Fish Tacos

My husband went fishing and brought home striped bass. Being a Latina from So-Cal, naturally I craved good fish tacos! This recipe was "da bomb!" Everything -- the combo of spices, the yummy white sauce, and especially the beer batter ingredients were divine! We used a thermometer to get the oil the exact temperature. We served our guests these tacos and they raved about them! I will be using the beer batter in future fish, shrimp, or scallop recipes AND I even think its a suitable batter to go around chile rellenos.

Real NY Jewish Rye Bread

This recipe is hands-down, the best recipe for rye bread I have encountered. I have successfully made it in the bread machine, using either the full loaf cycle, or the dough cycle and finishing it off the second rising in a loaf pan then baking it in the oven. It is perfect as written but sometimes I add 1 heaping tsp. of grainy mustard to enhance the flavor. To change things up I've also substituted demerara sugar with organic barley malt syrup, which is commonly used by bread bakers. Thanks for a fantastic recipe.

Sourdough Bread III

I hate to give critical reviews to any recipe. However, I did not care for this recipe because it did not taste like authentic sourdough bread. This type of bread does not need "fancy" additions like milk or margarine. Sometimes simple is better, i.e. sourdough starter, flour, water, salt, a bit of sugar and yeast.

GA Peach Pound Cake

This was so very luscious and moist! I used frozen peaches, thawed in the microwave, and threw in a few fresh nectarines. To make it a little less caloric, I substituted 1 cup of sugar with granulated Equal and 1/4th cup of the butter with Greek Yogurt. I took a poster's hint and made a glaze of peach juice and confectioner's sugar. DH loved it and even took some to the office. It was a hit!

Irish Shepherd's Pie

We're trying to save calories, so I used reduced fat cheddar and cream cheese and it still came out yum. I upped the veg amount, adding leeks, celery, and fresh carrots. A fellow reviewer suggested curry powder; it pairs well and adds a depth to lamb dishes. I froze half the amount for a future enjoyable dinner!

Orange and Fennel Salad

The orange vinaigrette for this recipe was "out-of-this-world" delicious. I had no lemons, so I used lime juice and about a tablespoon of cranberry juice for color, along with the orange juice and vinegar specified. This is such a refreshing and unusual salad. Perfect for summertime barbecues or for winter holidays - when oranges are at their peak of perfection. Yum.

Eggplant Supper Soup

Wow, this eggplant dish was deeply satisfying. I made it into a thick goulash, rather than a soup. I added bouillon paste plus homemade beef broth to the hamburger meat. Since I only had petite tomatoes on hand, I added a tsp. of Italian Seasoning, a tsp. of tomato paste and a small bay leaf. Yum. Thank you for this delightful dish.

Roasted Sage Broccoli

So healthy and yummy! Much to my dismay, I didn't have fresh sage leaves. I substituted with rubbed sage and 2 fresh pressed garlic cloves. It worked perfectly. Who knew that sage could impart such a wonderful flavor to roasted broccoli?

Pammy's Slow Cooker Beans

This was tasty. I didn't have pinto beans so I used great northern beans and added a touch of poultry seasoning at the end of cooking time. I cooked it 5 hours on high and 3 hours on low.

Lamb and Rice Stuffed Cabbage Rolls

I was true to the recipe, with the exception of using raisins instead of currants. The recipe is superb -- with a Moroccan or North African twist. Its blend of lamb, spices, almonds and currants (raisins) give it a mellow, sweet, crunchy and heady flavor. This is all offset by the juiciness of the cabbage roll, braised slowly in a hint of tomato puree and silky chicken broth. It was a breeze to make, using Chef John's tips for steaming the cabbage to remove the leaves, plus his directions for shaping the meat into tiny loaves before stuffing and rolling the cabbage like a burrito. This recipe was unlike any other recipe on this site for stuffed cabbage and it was a joy!

Best Brownies

Sooo easy - mix it up in one pot and bingo, you have some fantastic brownies. I especially liked that you could cut the recipe in fourths (I'm making an effort to bake in small portions) and the flavors remained perfect. I used maple syrup instead of honey for the frosting and it spread perfectly over the warm brownies. Thanks for this recipe.

Sweet and Sour Pork III

I loved the fresh tangy taste of all the ingredients vs. the "canned red glop" that passes for sweet and sour pork in some restaurants. Even though I I substituted frozen pineapple bits and brown sugar (I ran out of white sugar) the recipe came out perfect. Will make this again, as it is hubby's favorite!

Springfield Style Cashew Chicken I

I followed the submitters April 13, 2009 version of the recipe. Being from Los Angeles, I have never tasted Springfield Style Cashew Chicken before. I was a bit skeptical, but it was a fantastic recipe -- very flavorful! Since I had no chicken broth on hand, I substituted with chicken bouillion and added thinly sliced button mushrooms and a pinch of butter to give the gravy richness. Next time I will be sure to have homemade chicken stock on hand. I will also coat my chicken with potato starch instead of flour to give it an ultra crisp coating for frying. I garnished my Cashew Chicken with red and yellow peppers and crisp green snow peas, as well as the green onions. The meal was the perfect blend of crunch, gravy, color, and cashew nuttiness. I will certainly make this "comfort style" dish again. It was a hit with my husband, too. Thanks for submitting this recipe.

I am Hispanic and just want to say that this is a spectacular recipe. Thank you for submitting it, Ladygwyn. I made mine using what I had on hand, i.e. ground turkey instead of chicken, as well as Crema Mexicana instead of cream. This will become a new family favorite!

Ginger Garlic Paste

Five stars (with reservations!) - This was excellent for use in Indian butter chicken recipe. But as a general health warning -- garlic infused in oil should NEVER be kept at room temperature or stored in the refrigerator for long periods of time -- it can lead to botulism poisoning. Use this ginger-garlic paste immediately or store in the freezer for future use. The jarred varieties you find in the store all have preservatives in them for just this reason.
