Slow Cooker Chicken Taco Soup

It was a cold and rainy day and I was looking for a good comfort soup and I found it in this one. Easy ingredients that I had on hand and I'm not sure why one reviewer said this lacked in spice and added things. This WAS spicy and lacked in nothing. The beer really added that special touch. If you don't like beer then DON'T complain about the beer taste.....DUH!!!! Come on people!!! This one was easy and lacked for nothing when you need a quick and easy and pick me up for dinner.

Corned Beef and Cabbage

I cooked corned beef for the very first time today and used this recipe. Go with the beer. I bought a pre-packaged thing of corned beef and the beer made it extremely tender. My hubby now has a different opinion on this particular meal. Love it...thanks!

Hot German Potato Salad III

I let another reviewer talk me into using less potatoes and I shouldn't have. The flavor was good and tart. Stick to the original amounts the recipe calls for and if you don't like hot potato salad or you don't like vinegar then DON'T make it anyways and then complain. Geez I hate when people do that!!! This was very good and I will make again!

Baked Chicken Reuben

I made this tonight and all in all I think it is a great recipe. Next time I will scale way down on the thousand island dressing but that is just a personal preference. I love kraut and by putting the dressing over the top of everything it seemed to drown everything else out (which some people maybe prefer). Like I said though, look at the ingredients/layers and just assemble it according to your preference. If you like the ingredients then the combination of flavors is good. Like other reviewers I baked 350 for an hour. Thanks for the great recipe!

Asparagus Soup

I get so tickled at reading the reviews and this recipe is a classic example. If this entire batch of soup is too high in fat and sodium than I must be a terribly unhealthy cook. Since when is 1 cup of 1% milk and a dash of garlic salt entirely too fattening/sodium for 4 servings of soup? That is just funny to me. I made this soup tonight with some asparagus I had bought at the store that was going bad and a few sprigs from my pathetic garden and I DID use chicken broth (not by any means a vegetarian) and because I like things a little spicy I added some spices that gave it some heat (personal prerference is all). I had something else lined out for dinner (hubby hates asparagus) but I did taste this as I was putting it in my to-go container for tomorrows lunch and it was so good that I made the hubby taste a little spoonful and his reply was, "I hate aspargus and I'm not a big fan of soup but this isn't all too bad". This is a very simple,easy, and extremely fast base to work with if you like asparagus. Get creative and add things you like. And please, don't go giving it a bad review because you don't like asparagus. HELLO!

Pueblo Green Chile Stew

Okay, I tweaked this just a bit due to what I had on hand and my personal taste (more broth/soupy, onions, cilantro for topping etc.) but hands down this was a great recipe with good flavor, fast, and easy to make. I will be keeping this one for days when I don't have much extra time but crave a hot comforting soup. Thank you!

Pepperoni Hopple-Popple

Okay, so I DID change this up a little due to personal preference (black olives, mushrooms, etc.) BUT, this is an excellent starter and a great way to use up extra eggs. You just need to use your common sense when it comes to how brown you like your potatoes and how much seasoning/italian seasoning you like. I found this very helpful on a night where time was ticking and I was running out. Thank you!

Hamburger Vegetable Soup

I did this in the crockpot and added my own personal touch but it is a good receipe and has endless possibilities. If you don't want to guess with the consistency then just use potatoes instead of the pasta and you know where you stand at all times. Thanks for a great way to use up some ground venison and in addition get a comfort food full of vitamins!

I did this in a slow cooker and added celery and potatoes and it turned out very good. I topped it with hot peppers, cilantro, cheddar cheese, sliced black olives, and green onions.

Shrimp Enchiladas Suizas

This tasted fine but it didn't look very appetizing on the plate. It did not look like enchiladas but more of a casserole. Again, tasted fine but was disappointing for all of the money and hard work that went into it. Also, it takes WAY longer to prepare than stated so keep that in mind if you make it.

Fish Tacos with Honey-Cumin Cilantro Slaw and Chipotle Mayo

These were delicious! I followed the recipe and they came out perfect. The only thing I did differently was I served them on a hard tostada shell which gave them even more crunch. I will be making these time and time again.****update***I have made these numerous times now and always follow the recipe exactly except for the flour/corn tortilla sub due to our preference. This recipe is the one my hubby speaks of most often out of the many I have made from this site. This is his all time favorite I do believe. This last time I made them (6/2011) I made a huge short-cut because I was in a hurry to get down to the pond to fish. I used FISHSTICKS of all things and even though they were not as tasty as sticking to the recipe and breading your own tilapia, they still turned out good and something to consider if you are short on time. Again, I was in a hurry and didn't take the picture until the next day so the slaw spent too much time absorbing to make for the pretty colorful slaw that it is when you first make it but it was still just as tasty if not more. My next go at this recipe will be with fresh catfish from the pond. Thank you so much for the fabulous recipe!

Chipotle Shrimp Tacos

Great recipe! I made a few adjustments but all in all I folowed it exactly and have no complaints. I baked the bacon in the oven, used the grease for the shrimp and then crumbled the crisp bacon over the top of the tacos. This one has endless possibilities. Thanks for the great recipe!

Chunky Chicken Noodle Soup

Excellent! I used more veggies and broth and also used frozen egg noodles along with some frozen peas but all in all this was a great base recipe for comforting chicken noodle soup. Quick and easy and I will make often. Thank you!

Cajun Baked Catfish

Great recipe but a little too salty and the thyme was overpowering. There is enough salt in the hot pepper sauce so I think garlic powder would be better than the garlic salt and then 1 teaspoon of thyme instead of 2. Next time I will also use a lot more hot sauce but all in all it was a great recipe and I will make again next catfish season. Thanks for a great recipe!

Mexican Style Shredded Pork

GREAT pork recipe for tacos. I stuck to the recipe except I added some extra chipolete peppers and adobe sauce but only because I used wild game and it is a bit harder to season. I will definitely make again once hubby gets us another hog. Recipe is a keeper! Thank you!

These turned out really good and were a nice change from the ordinary ones. I de-seeded the jalapeno out of fear they'd be too hot but I should have left them in as the recipe called for. Thank you for this different variety and I will definitely makes these again!

Slow Cooker Venison Roast

I changed this up a little only due to the sodium but it still turned out very good and tender. I did not use the can of cream of mushroom soup. I had to cook mine much longer than stated but it was SO tender and tasty! I have a freezer full of venison to use up and this is one will be used again. This was one of the tastiest venison recipes I've tried from this sight.
