Chihuahua-Style Salsa Verde

I thought this was fabulous! I used fresh cilantro (about 15 sprigs) but that is the only change I made. I was not thrilled with the idea of can jalapenos but I had some in the fridge and my garden tomoatillos needed used so I decided why not? The lettuce makes for a nice consistency and the cumin flavor really comes through nicely. I was very impressed with the outcome on this one.

Made as written and this was good. I did end up adding some additional seasonings in the end to give it more flavor but all in all I have no complaints.

Mexican Pintos with Cactus

Okay I cheated a little bit. I had some extra cactus leftover from another recipe on this site and I stumbled across this one. I didn't have time for a slow cooker and so I brought my pintos to a boil, turned off the heat, and let soak for an hour. I drained the water and proceeded from there but all done on the stove. LOVED this recipe and I will use again. Top with extra bacon, onion, and jalapeno for additional yummy goodness.

Pollo con Nopales (Chicken with Cactus)

Well, I had all of the ingredients on my list and when I got to the Latino market, the only jarred nopales were ones that were pickled in vinegar, serrano peppers, onions, etc. I had never bought or tried cactus but I had it in my head that they would be packed in plain old water and I panicked because I didn't think the pickled could be the right thing. I went ahead and picked some up but also bought some fresh that was already de-prickled and cut up. I debated which to use all day and finally turned to the Buzz for help. I'm still not sure if the pickled is what I was supposed to use but I went with the fresh because..well it was perishable. I enjoyed this and am already looking forward to trying it with the pickled cactus. Unless I hear otherwise that is. Thanks for sharing another winner SB! PS-I had your Arrachera again this weekend too :)

Sesame Snap Peas

Loved this recipe! One thing I wanted to mention is that I added mushrooms to the mix because I think they go hand in hand with snap peas. Again, the recipe turned out perfect for me BUT I do feel it would be a bit too oily as written without the shrooms to soak up some of the oil. You can always add more oil so if I ever do it without the mushrooms, I will start with 1 tsp. of the sesame oil and go from there.

Trini Style Chicken

The only change I made is that I used boneless chicken because that is what I had in the freezer. I loved this recipe and I especially loved the bright orange the sazon season made it. The bok choy blended in perfectly in this sauce. This was so easy to make and the end result was very impressive.

Peppered Cilantro Rice

I was in a hurry and made as is (except I used green bell in place of the yellow because this is what I had on hand) and forgot that I was going to make a couple of changes. 3 1/2-4 stars as written but if you replace the water with chicken stock and add a couple shakes of cumin it makes it a 5 in my book. Okay as written but it needed a little something extra in my opinion.

Pollo Oaxaca

Followed the recipe to the T and it was perfect as is. I knew my blender was going on me and it finally petered out on this recipe but thankfully bigger chunks don't bother us at all. This was the first recipe I used with the tomatillos from my garden (the ONLY thing that has survived this heat in my garden) and I couldn't be more pleased. Thanks Avon!

Super Easy and Spicy Fried Pickles

Made as written except that I used my deep fryer and these turned out great. Not ALL of the breadcrumb mixture stayed on no, but it was the perfect amount that did in my opinion. I served these along side of grilled burgers and this was a nice change from french fries.

These were EXCELLENT! The addition of green onions and jalapeno to the venison mixture is genius. Hubby and I both agreed that out of all of the burger recipes I have tried this summer, this one is the best so far.

Creamy Kielbasa and Potato Soup

I did add carrots but that was the only change I made. This was pretty tasty and my only complaint is that the canned cream soup flavor came through more than I like and expected it to. If I make this again, I will make my own cream base and not use the can. Fresh herbs would also improve this recipe.

I scaled way back on the servings since it is only the two of us and clams are not available to me so I took the advice of the recipe submitter and used mussels instead. I also took the advice of previous reviewers and sprinkled some white wine over the top of each packet. We enjoyed this very much and I will use this recipe again.

This was excellent! I used sugar and cut way back but only due to personal preference. This is a perfect summer side dish. All of the different colors in this made it very appealing and "easy on the eyes". Thanks for sharing!

Venison Steak Strips

This is the best venison recipe I've tried from this site and I've tried a good number of them. I thought the soy sounded out of place but it blended in nicely with the other flavors. I dropped mine down in an electric fryer instead of a skillet on the stove top but that was my only change. Great recipe!

Zippy Broccoli

This was super simple and very flavorful too. This would be a perfect side for times when you need to be outside tending to your meat on the grill. Whip up your sauce beforehand, set the timer on the microwave, and then you would have plenty of time to drain and toss while your meat is resting. Next time I will double the hot pepper sauce because I loved the flavor it added. Thanks for sharing!

Peruvian Chicken Soup (Aguadito de Pollo)

I shredded my chicken because I do not like a soup you have to cut up before eating. I used the whole serrano because I wanted the heat and I threw some shrimp in that needed used up (loved that addition). This would have been a 5 star (with or without the shrimp) except the cook time is off. I shaved 10 minutes off and my rice was still overcooked. Great soup and one I will make again.

Perfect as is! You have to like the sesame oil or you are not going to like this recipe because the flavor definitely comes through. Next time I might throw some chopped water chestnuts in the pork mixture and then throw some bean sprouts on top just for fun.

Salad with Artichokes

I cut back just a tad on the vinegar after reading the reviews and I'm glad I did. I added black olives because I like them with my artichokes. This was the perfect salad to go along with the Personal Portobello Pizza from this site. It will go nicely with a lot I make so it will be used often. Thanks!

Personal Portobello Pizza

I used pizza sauce as the recipe submitter suggested, I removed the gills, and had to sub garlic powder for the garlic because I used up my last one without realizing it. These were super tasty and a lot of fun to eat. Oh, and I used the mini pepperoni so that I could distribute them more evenly and they came in mighty handy for this. We enjoyed these and will make again. Thanks!
