Creamy Buttercream Frosting

Reviewed: Jul. 29, 2011
I had never made this kind of frosting. Usually I do Icing (milk, confection sugar, vinilla. Simple-I don't even use a recipe) I like the taste of the icing much better but that is no fault of this recipe. I needed frosting to go under Fondant because I find the Fodant by itself unappealing. At first I didn't think it was going to make the amount promised (2 9in cakes) but after whipping the butter for more than 10 minutes and adding the sugar and cream I had more than enough. I don't know how much sugar I added but it was more than a cup--I kept adding a little at a time to cover the overwhelming butter taste. I also added more cream so the extra sugar wouldn't weigh down the fluffyness ( I used confectionist sugar, I do not recommend regular sugar) It came out very light and fluffy. It is very rich, not something that I would want to eat a lot of. The cake came out beautiful and everyone exclaimed over the frosting so it was a hit. Although next time I would add vanilla. I think the trick is to add the sugar and cream to taste and not stick to the recipe and maybe add some flavor extract of your choice. I am sure I will use this again.

Amazingly Easy Irish Soda Bread

Reviewed: Mar. 17, 2009
Wow! I had never made soda bread before and this was a very easy recipe to follow. It came out well enough for my first time. It didn't look that great but that was my fault. Luckly it tasted great.

Reviewed: Mar. 17, 2009
I made this for people that don't usually like salmon. I did half with the balsamic glaze and half with a dill sauce. It was a huge hit. Everyone went back for seconds. *update* Now this has become the requesterd meal! My mom asked that I make it for her Birthday dinner :)

Apple-Stuffed Squash

Reviewed: Feb. 24, 2009
I was trying to find a way to use up squash that I had already cooked so I reversed the recipes and made squash stuffed apples. It was one of the best things I have made in a long time. I pureed the squash with the spices and sprinkled the apple halves with brown sugur. The apple halves made prefect serving portions. The spices and sugar could be adjusted to make this into a dessert. I think next time..and there will be many next times...I will put walnuts on top.

Spicy Peach-Glazed Pork Chops

Reviewed: Feb. 24, 2009
Wow. I wasn't sure how this would turn out. I needed to throw together a nice dinner and I didn't have time to go to the store. I used apricot instead of peach preserves and I used peach juice instead of wine. It was wonderful. I can't wait to try it with the peach preserves.
