Pork and Black Bean Stew

Yum! Very hearty and filling. I had way too much pork so I needed to double up the other ingredients, however didn't have 2 cans of black beans. I added 1 can of baked brown beans, not blended at all. After it was finished cooking it was a little watery so I added a flour/water paste to thicken.

Slow Cooker Chicken Taco Soup

Excellent, great for company with some sides. I doubled the recipe but my slow cooker didn't like that, so when it was time to shred the chicken it was still partly raw. I transferred it to a soup pot and simmered for an hour, then shredded. Worked out OK, so I guess it could be a slow cooker recipe (single) or in a pot for a couple of hours. Don't leave off the chips and cheese to top, they made it!

Addictive Sweet Potato Burritos

Sweet potatoes don't show up here much so I used yam and it was an odd flavour with the mexican bean mixture. The beans were nice but could have used more spice to make up for the yam. This is very healthy though so will probably make again with some adjustments.

Jagerschnitzel

Very tasty, family loved it. I was short some ingredients so I changed a couple of things, I also used Shake'n'Bake to coat the pork to save time and mess and so I could bake in the oven instead of frying it. I used a small amount of olive oil to saute the mushrooms until soft and brown, added several chopped green onions and the garlic. The boullion ended up cooking too long and needed more liquid so I added a splash of white wine, then the sour cream (low fat version). Worked out great.

Vietnamese Style Vegetarian Curry Soup

This turned out with OK flavour, but was very watery, not very creamy. It needs quite a dose of salt. Probably wouldn't make it again.

Imitation Meatloaf

Super easy and very delish. The kids liked the flavour too and it's not mushy nor dry. I didn't have wheat germ so just left it out and it was OK. I also put some of the crushed tomatoe with a bit of worcestshire sauce and sugar over the top for the last 10 minutes of baking.

Raspberry Lemonade Pie

Very easy and good on a hot day. I thought it looked a little bland by itself in the pan so I made a quick raspberry coulis to serve over top. (bunch of raspberries, couple spoons of icing sugar and a big squeeze of lemon juice in the blender)

Tasty Lentil Tacos

We eat very healthy but I also try to find things that our kids will like. This was a hit! Very tasty and easy I've made it several times without changes to this recipe. If you are trying to cut fat and increase fiber etc. but have some picky eaters you should try this!
