Arangini (Italian Rice Balls)

I've been looking for this recipe everywhere! Thanks so much! These are just like my Nonna's, except she put peas in the middle of hers and occasionally a bit of ground beef or lamb instead of the prosciutto. I made my rice balls pretty large, and molded them into a bell shape like my Nonna's. Delicious! Thanks again!

Mom's Zucchini Bread

I added an extra cup of zucchini and substituted 1 cup of the white sugar for 1 cup of brown. I only used a total of 2 cups of sugar and could have used less with good results. Either way, this is a great recipe! I've made it with yellow squash, too, and it's also yummy.

Awesome Carrot Cake with Cream Cheese Frosting

I only used 1 cup of oil, added 3/4 of shredded coconut, and used 1 3/4 of powdered sugar in the frosting. PERFECT! Great cake, made it for Mother's Day and everyone enjoyed it. Thanks!

A Good Easy Garlic Chicken

I don't know what everyone is fussing about. Just as the name of the recipe implies, it's a good, EASY chicken dish. A dish from a 5 star hotel it's not; however, if you need something tasty and in a jiff, this definitely hits the spot. Great recipe, use it many times when I'm on a tight schedule. Thanks!

Garlic Spread

Very good, however, too much onion. I think next time I will use 1 TBSP of onion powder instead. Or maybe puree the onion. But anyway, really good, very easy, would make it again. Thanks!

Barbecued Shrimp

As the recipe is, it's delicious, but not enough heat for my tastes, so I added a good hard shake of ground cayenne pepper...and it made my nose run. LOL. I also cut down this recipe to make 4 servings, 1 for him, 3 for me. :) I tried another reviewer's suggestion and served over rice and added a green salad.

Basic Flaky Pie Crust

Very easy to make, always have the ingredients in the pantry, extremely flakey. My only problem was, once I have this rolled out, I can't get it off the counter...even when I liberally flour work surfaces. Can anyone give me any tips? I didn't have wax paper on hand, so I tried aluminum foil, and it stuck to that, too. I managed to get a bottom crust by pushing pieces of dough into the pan, but my top crust was basically rolled out pieces that I put on the top. It didn't look bad, but it didn't look like a picture perfect pie. Oh well, the taste was picture perfect, and so I'm still rating this a 5 star recipe. Any tips are appreciated. Thank you for the recipe!

Homemade Crispy Seasoned French Fries

Macadamia-Crusted Sea Bass with Mango Cream Sauce

I served this with rice pilaf and a mixed veggie blend. Very good! I took the leftover mango sauce and put it on top of vanilla ice cream with a few slices of fresh pineapple. DELISH! Thank you!

Japanese Chicken Wings

Superb! I browned the wings in half butter; half vegetable shortening. I also added a few tablespoons of cornstarch to the sauce to thicken it up and then poured it over the wings and let them marinate a bit. Incredibly easy and awesome! Very tender and juicy wings. Thanks!

Cinnamon Bread I

This bread is fantastic! I can't believe how easy it was to make, and the results are incredible! I even did the milk and vinegar trick. My bread came out delicious and rose quite high!! You could do any number of variations on this one...personally, I am going to try adding some orange zest and see what I come out with. I love the topping, but next time, I will add more simply because it's so yummy! Thank you for a wonderful recipe! I'm planning on baking several loaves of this for gifts at Christmas time! :-)

Bread and Celery Stuffing

This has got to be the most boring recipe I have ever made. I don't know what everyone is talking about, "a bit more broth," I had to use nearly TRIPLE the broth to get it not be crunchy and forget the seasonings "as-is." I had to TRIPLE the poultry seasoning and add 3 T each of sage, thyme and garlic before it was remotely decent. Sorry, but save yourself the trouble if you like food with flavor.

Caramel Corn IV

Man this stuff is good (and addictive!) I agree that you should double the sauce. I didn't have any problem at all with it sticking. I sprayed the pan in which I cooked the caramel, used a rubber spoonula/spatula thing, and used a glass Pyrex to bake the corn. The only thing I sprayed with non-stick spray was the baking dish. Delicious and easy! Thank you!

Chewy Coconut Cookies

These are fantastic! I used 1/4 cup white sugar and the rest, light brown sugar. They were wonderful. I added chopped pecans to some, and the others, I dipped in melted chocolate and then sprinkled on the coconut (see picture). Thanks for the recipe!

Crustless Cranberry Pie

This is easy, delicious and looks beautiful. Thanks so much! I didn't have any almond extract and just used vanilla and it was excellent. The second time I made it, I used almond extract and added about 1 and 1/2 teaspoons of orange zest and it was outstanding!

Skewered Grilled Potatoes

These are EXCELLENT! I, too, added a handful of grated parmesan to the marinade mixture. I grilled these alongside chicken breasts and veggies. I used half of the extra marinade to baste the chicken and it was also great! One time I wanted to make this and was out of rosemary so I substituted dried Italian seasoning. Equally good! Thank you!

Best Lemonade Ever

Very good! It took me 6 medium sized lemons to get the required juice when I halved the recipe (so 12 if you make the full amount). I even microwaved them for 30 seconds and rolled them around. Oh well...still worth it! I added some pureed strawberries that I made by adding berries to a little of the lemonade in the blender and blending until smooth. Then I poured it all into the pitcher for pink strawberry lemonade. Thanks!
