Stuffed Pepper Soup IV

I made it as directed except for the thyme and sage. I used a half teaspoon of Italian seasoning blend. It's delicious the next day. The next time I make it, I'm going to make it in bulk, freeze batches before adding cooked rice, and when I'm ready to serve, add 2 cups of cooked rice to the thawed soup-a quick home-made meal when you are pressed for time.

Beet Salad with Goat Cheese

I make this recipe with only one small change-I candy almonds instead of walnuts due to nut allergy. I cheat and use pre cooked beets that I buy in a large package at Costco. The brand is "Love Beets" and I do! I do!

Spaghetti Squash I

This is far and away the most delectable recipe I've ever tried for spaghetti squash. I used a carton of grape tomatoes instead of chopping tomatoes. I also added some roasted artichoke hearts. The fresh basil and feta give this such an irresistible flavor it's hard to stop eating. We enjoyed this as a main course for meatless Monday. This is going into my regular rotation!!!!!

Cousin David's Slow Cooker Brisket

I did a slight variation because I only had one bottle of Heinz chili sauce. I used that and a jar of salsa, along with the other ingredients. Puts a little bell peppery kick into the flavor. I have made the recipe as is as well. And yes, other reviewers are 100% correct-make sure you are not using a corned beef brisket, and make sure you are using a ketchup based chili sauce, not a hot pepper sauce. Blessings on the family of Dave. What a sweet tribute.

Authentic Chinese Egg Rolls (from a Chinese person)

I made these exactly as written except for MSG, and unfortunately I don't have easy access to wood ears. I used portabella cut into match sticks since I had a few on hand. Next time I make them I will add some hoisin or oyster sauce for a little additional kick. I also think allowing the cabbage mixture to rest longer will infuse it with more flavor.

Cranberry Apple Stuffed Pork Loin

I make a very similar recipe using apple and sausage enhanced cornbread stuffing. The process of butterflying the pork loin roast is very nicely explained. Well done!

Layered Eggplant Hamburger Casserole

Followed the recipe exactly except that I used ground turkey to reduce the calorie count. Next time I would use fresh parsely and season the breadcrumbs. It's very tempting to add a few steps and turn this into moussaka, but as is it's a quick recipe that makes a nice entree for under 400 calories if you use turkey.

Asian Chicken Salad

This is the best "Asian" salad dressing recipe I've tried. I double it without doubling the vegetable oil. I use toasted sesame oil because I love the intense flavor. I use roasted garlic rice vinegar. I add a tsp each of black and white sesame seeds for visual interest. I've also made it following recipe directions exactly and enjoy it thoroughly.
