Buffalo Chicken Dip

I used a Rotisserie chicken like others did. I also used half a cup of Blue cheese dressing and half ranch. People noticed the blue cheese hint without being overpowering. Next time i might substitute half the cheddar with Monterey Jack cheese. That might cut down on the visible oil from the cheddar! Overall very yummy!

Fruit Salsa and Cinnamon Chips

This was Delicious and great for a party! A lot of peeling and fine dicing and takes longer than 15 minutes but worth it! I didn't add preserves, i just reserved some strawberries and pureed them with teaspoon or 2 of real sugar or more for your taste, some lemon and lime juice. I also didn't feel like baking chips so I just bought Stacys cinnamon pitta chips.

The Best Clam Sauce

Love this! I use chopped, whole clams, whatever I have on hand for the sauce. I use a little more wine and throw in some hot pepper flakes with the garlic. My husband buys fresh clams and grills them and I put some in the sauce for that real fresh clam taste. We like Bow Tie pasta with this too. Throw it all in a big platter and you have a great party dish!

The Best Turkey Chili

This is almost just like I make. The only difference is I sautee a chopped green bell pepper in with the onions. I also use a jar of black bean salsa (or whatever salsa I have on hand) instead of the can of tomato sauce & add a pinch of brown sugar. My daughter likes corn in chili, so I add that too! :) My latest addition is chilies in Adobo sauce. Adds a nice smokey authentic taste! Add to your taste though, they can get hot if too many.

Mom's Zucchini Bread

This is very yummy, but I also made some changes as some other posters suggested. I used half wheat flour & half white. I halved the oil & used unsweetened applesauce. I also cut the sugar down by half & used half brown sugar. I also added nutmeg just because I like it, and sometimes walnuts for the nut lovers. People send my husband home with zucchini for this bread every year!

Black Beans and Rice

This was good & even easier when I tried it in my new rice cooker! I added about a 1/2 cup each of fine chopped red & green peppers to the onions just because I had them & it looked nice too. Another time I had some salsa left over & tossed that in too.

Lemon Garlic Tilapia

I also sauteed the garlic in the butter and lemon in a pan & then became pinched for time, so & added 1/4 cup of white wine & just placed the tilapia fillets in the pan! I sprinkled them with parsley & let them simmer for no more than 10 minutes & they turned out so good! The fillets were thin so I didn't want to mess with flipping them & just spooned the sauce on them & covered. My guests said it was better than a restaurant & asked for more of the sauce over everything. So easy without putting on the oven or the grill & very moist. Rice & a fresh spinach salad complemented well. I've already made this twice & it just can't get any easier!
