Eggless Peanut Butter Cookies
I just made these cookies with modifications for my grandson who is allergic to not only eggs, but also peanuts, tree nuts and all dairy products. I used Earth Balance buttery spread (although, I am sure shortening works fine), sunflower seed butter, soy milk and I added enjoy life allergy friendly mini chocolate chips. They are super!! Hope this is beneficial to those who are in the same "allergy loop" as we are.

Cantaloupe Frenzy
I had an overripe cantaloupe and figured this recipe was worth a try. I made only a small portion, but will definitely finish up the rest of the cantaloupe using this recipe. I added a small amount of lemon juice, but may try some of the other reviewer's suggestions. I wonder if it would freeze well!?

Sweet Russian Cabbage Soup
Made this today for the first time. Enjoyed it very much. Used quart of Kitchen Basics Beef Stock instead of bouillon cubes. Used Meatball mix (part ground beef, part ground pork) Added a bit of leeks and green pepper because I had them to use up. Increased vinegar to 1/4 cup, but left sugar at 1/2. Might cut cabbage smaller or even shred the next time. Makes much more than 4 servings, which is no problem. Love leftovers and am sure it will freeze well.
